Rainbow ramen

There were so many times when I said; “I love ramen.” And I can’t stop saying it. So I made it again. I called it the rainbow ramen bowl, because of all of the different ingredients and colours in it. Why do I like it so much? Because it has everything; vegetables, meat, noodles, soup, spices and sea food. It can be all in one or only meat or vegetables. This dish will not only warm your body and your soul. There will also be instant happiness in your home. 

Ingredients for 2 amazing rainbows:

  • 0.7-1 litre of chicken (or veggie) stock
  • 1 red onion
  • 2 carrots
  • ¼ of red cabbage
  • 1 garlic clove
  • 2 eggs
  • 1 handful of bean sprouts
  • 2 spring onions
  • 1 chili
  • 3 Tsp of tomato sauce
  • 100 g of noodles (Mie or rice)

Prepare a pot for the stock and a small pan for the cabbage. Clean and chop the garlic. Wash the carrots and cut them lengthwise into quarters. Put the garlic, carrots, tomato sauce and the chicken stock in the pot and bring it to boil. Then reduce the heat and add the noodles.

At the same time cut the red cabbage in stripes. Put the cabbage in the pan with 50 ml of chicken stock and the chopped chili. Steam it for ca 5 minutes.

Wash and clean the rest of the vegetables. Chop the onions (thin slices) and the spring onions. Regarding the eggs, it really depends on how you like them. You can make a sunny-side up egg, a boiled or a poached egg.

Prepare two deep plates and place in the cooked noodles. Then add the red onion on one side, next to it the red cabbage, then the bean sprouts and the carrots from the chicken stock. Sprinkle the spring onions and pour the hot chicken stock over all the vegetables. Top the “Rainbow ramen bowl” with an egg.
