Rolls of smoked raw salmon, fresh and crispy cucumber and creamy horseradish
Just slice thin strips of cucumber, layer with smoked salmon, and spread a dollop of horseradish cheese before rolling them up. They’re not only easy to prepare but they look astonishing as well. On top of that, they are also a nutritious option packed with protein and healthy fats. And that makes them a delightful choice for both entertaining and everyday healthy eating.

Tangy horseradish and chimichurri
To keep it even more interesting, I add extra flavour to the salad. Firstly, I made chimichurri – a super flavourful sauce made with fresh herbs, olive oil, garlic and chily. Secondly, I added creamy horseradish cheese to the rolls. It adds a tangy kick, complementing the smoky flavour of salmon and balancing the crunch of cucumber. Yummy.
Ingredients for a salmon cucumber rolls salad:
- 1 cucumber
- 150 g smoked raw salmon slices
- 50 g cream cheese
- 15 g horseradish (in a jar)
- 1-2 Romana lettuce (or any other lettuce)
For the mayonnaise:
- 1 egg
- 10 g horseradish (in a jar)
- a pinch of salt
- 200 ml olive oil
- fresh dill (chopped, as much as you like)
For the chimichurri:
- 10 g fresh parsley
- 2 garlic cloves
- 7 g fresh mint
- 3 g dried oregano
- 15 g fresh coriander
- 2 pinches of sea salt
- 100 ml olive oil

Firstly, prepare the chimichurri. In a food processor, combine parsley, mint leaves, coriander, oregano, garlic, salt and olive oil. Pulse for 30-40 seconds, until well combined.
Second, make the dill mayonnaise. Put one egg, horseradish and a pinch of salt in a food processor or blender. While blending, keep adding the olive oil in a slow, thin stream. Once the mayo gets thick, stir in the dill and store in the fridge until ready to use.
Wash the lettuce and let it drain. Then, using a potato peeler or a mandoline, slice thin cucumber strips. Spread a thin layer of horseradish cheese on each slice and layer it with a smoked salmon slice. Carefully roll them up.
Finally, arrange the lettuce onto a larger plate and top it with salmon cucumber rolls. Garnish your salmon cucumber rolls salad with a drizzle of chimichurri and mayonnaise for an extra burst of flavour.
