Salmon roasted pear rocket salad is one of the most satisfying salads. Slightly peppery rocket, smoked salmon and sweet pear topped with cheese and nutty crunch make a perfect lunch or dinner.

Salad dishes and dishes in general that are pleasant to the eyes and exciting for the palate are always winners. I mean, just take a look at this salmon roasted pear rocket salad recipe. It is screaming “Eat me”. Amazing!

The secret of making a filling and a flavourful salad is to combine lots of textures, colours and flavours. Take this salad, for instance: a bit peppery rocket, fruity pear filled with gooey cheese, crunchy almonds, sweet maple syrup, nutty hemp hearts and salty salmon. Woohoo! What a combo! You are going to love it.

That is a great way to enjoy eating more salad. It is really easy to prepare, it looks good and it tastes good. And, at the same time, it is also good for you.

And just like that you can create any other amazing salad. Simply be creative by combining greens with proteins, fruits, some healthy fat and, of course, something crunchy.

Arugula/rocket

Arugula or rocket is one of my favourite greens. I like adding it to all of my salads or simply enjoying it as the only green. Some people find it bitter or even spicy. No problem at all, pick baby arugula instead, which has a milder flavour. Baby spinach or any other lettuce will do great, too.

However, the great thing about rocket is that you can combine it with anything. It pairs wonderfully with savoury and sweet, crunchy and creamy. And this combo of smoked, salty salmon and sweet pear is just divine.

Salmon

Also, I picked a pre-sliced smoked salmon. Firstly, is easy to portion and serve and secondly, the light smoky note gives an elegant touch to the dish. One important thing; make sure to serve it at room temperature for the best flavour experience. Moreover, salmon is not only delicious but it’s high in sodium and packed with fats essential for your body.

Ingredients for two portions of salmon roasted pear rocket salad:

  • about 10 almonds
  • 2 pears
  • 4 cheese cubes ( Asiago, Emmental or Brie)
  • 1 Tbsp maple syrup
  • 200 g fresh young rocket
  • 250 g pre-sliced raw smoked salmon (room temperature)
  • 1 Tbsp of hemp hearts
  • olive oil
  • vinegar

To begin, preheat the oven to 150°C. Scatter the almonds onto one half of a baking sheet lined with parchment paper. Then, wash and half the pears. Scoop out the core and place the pears (cut side up) on the other half of the sheet. Put in the oven for 15 minutes.

In the meantime, cut the cheese into cubes and wash the rocket. Let it drain.

Once the 15 minutes are over, remove the almonds from the baking sheet and place them in a bowl. Turn the oven to 180°C. Arrange the cheese on the pear and drizzle with maple syrup. Put back in the oven and roast for 10-15 minutes or until cheese gets gooey and golden brown.

Finally, transfer the rocket to a salad bowl and toss it with some olive oil and vinegar. Divide it between plates. Sprinkle it with hemp hearts and toasted almonds and nicely arrange the salmon slices on it. Last but not least, top it with roasted pear halves.

And there you made your salmon roasted pear rocket salad. You can serve it as lunch or dinner. It pairs great with a slice of bread, too.
