Take your ordinary muesli beyond oatmeal, brown sugar and fruits and try this delicious savoury carrot quinoa muesli. Crunchy muesli, tender quinoa, sweet carrots and fresh spring onions make a wonderful combo. A perfectly healthy and nutritious dish to enjoy at breakfast, lunch or dinner.
How many people you know usually have muesli for breakfast? Right, a lot. It’s the most common way of breakfast, after all; mostly combined with milk, yoghurt, sweet toppings, honey, syrup or fruits. Even though I love sweets, I prefer savoury food more. Wink. Therefore, sometimes, I “experiment” with savoury recipes like this one.
Furthermore, to be honest, it looks quite similar to carrot cauliflower rice, which I made some time ago, and to other savoury porridge bowls. They all taste delicious and look wonderful. Check out this asparagus oatmeal topped with bacon, egg and melisa. Yummy!
Muesli and quinoa
Have you ever tried savoury muesli? I found ginger muesli and I just had to make a lovely savoury dish. Therefore, I played with the idea of mixing it with quinoa, which adds a different texture to it, and with vegetables.

Savoury carrot quinoa muesli couldn’t be any simpler. In fact, as you can see, along with ginger muesli and quinoa, I used carrots and spring onions. Having said that, using ginger muesli is not a must. You can use normal muesli or oats, too.
This savoury carrot quinoa muesli has it all: fibre, vitamins, flavours, textures and colours. Moreover, it’s perfect for breakfast, lunch or dinner. Also, if you skip the salami, it will be a wonderful vegetarian and vegan dish. Wow! Double wow!
Also, it’s a simple, quick and budget-friendly way how to get some vegetables on your plate. This dish is perfect for everyone.
Ingredients for 2 portions of savoury carrot quinoa-muesli:
- a handful of quinoa
- 200-250 g ginger muesli or any other kind of not sweetened muesli
- 3 carrots (cut into cubes or circles)
- about 10 small pieces of salami (optional)
- 1-2 spring onions (roughly chopped)
- salt and pepper
In a pot cook some quinoa (according to the indications given on the package). Once the quinoa is cooked and there is still some liquid left (if not, add a couple of spoons of water), stir in the muesli or oats, season and cover with a lid to keep it warm.
At the same time, wash and cut the carrots, either into circles or cubes. The thinner you cut them, the faster they will cook. Then in a smaller frying pan, heat some olive oil, add the carrots and cook until slightly tender. Optionally, at half time, add the salami pieces to the same pan for a couple of minutes.
Finally, stir the carrots and salami (optional) in the quinoa-muesli, add the chopped spring onions and drizzle with some olive oil. Savoury carrot quinoa-muesli is a tasteful and a quick meal to prepare. Also, you might add some cheese or cottage cheese to it, if you want more creaminess. So delicious!
