Healthy poached egg over quinoa

This quick, satisfying and healthy poached egg over quinoa is a perfect meal for any time of the day. Also, the light quinoa, spinach and the lovely poached egg with a runny yolk is a simple yet tasty well-rounded meal, which will give you the energy needed for the day ahead of you.

Oh, this dish is so delicious, I could eat it all the time. And all you need is a couple of ingredients. However, even though it’s made with only three main ingredients (quinoa, spinach and egg), you shouldn’t underestimate it. You’ll be surprised by the mixture of flavours.

Like the first ingredient, we have quinoa. Quinoa is known as a superfood for being rich in fibre and protein. Also, if you haven’t tasted quinoa yet, it has a little nutty flavour. It’s light, stays fluffy and it goes great with vegetables, meat, fish and fruits.

Furthermore, the second ingredient I picked is spinach. I like spinach either sauteed or raw. However, this time I kept it raw. It’s simple yet still delicious. Moreover, I also used capers. Do you like capers? They are small green, mostly pea-sized buds, which bring a lovely tangy lemon-like flavour. Just perfect for this dish.

How to poach an egg

Finally, last but not least, we have the egg. I love eggs. But, how many times you tried to poach an egg and it turned out a disaster? Yeah, I know. Therefore, I am going to share a great trick on how to poach an egg. With this method, you’ll never fail to poach an egg again.

I’ve seen this trick many years ago on one of Jamie Oliver’s cooking shows. It’s simply brilliant. First, you place some foil into a cup (to get the form). Second, you crack the egg in it and season it. Third, you make a knot with the foil, in order to prevent the egg from running out.

The reasons why I like this method are, it never fails, you can add the seasoning direct in the egg and finally, you can actually see when the egg is perfectly cooked. Simply amazing. Don’t you just love it, when cutting the egg you see the runny yolk? Yummy!

Ingredients for two portions of a healthy poached egg over quinoa:

  • 200 g quinoa
  • 1 red onion (chopped)
  • 2 tsp butter
  • 20 capers
  • 2 eggs
  • olive oil
  • salt and pepper
  • a handful of young spinach

In a medium pot cook the lovely quinoa. I always rely on the quinoa water proportion 1:2 (in other words, use twice as much water than quinoa). Bring to simmer and cook for about 20 minutes. You’ll see the quinoa seeds double in size. Also, they will all get a fun looking form of a comma or number nine on six. Wink.

Never fail poached egg

In the meantime, wash the spinach and let it drain. Then prepare the eggs. As mentioned above, I used a great method of how to poach an egg, which never fails. Place a piece of film cling foil (ca 30 cm long) in a cup or small bowl. Then, spread some olive oil on it (in order to prevent the egg from sticking) and crack one egg in it.

Additionally, you can season the egg with salt, pepper, different herbs and spices. Then, bring the ends of the foil together up into a bundle, carefully tie it in a knot and at the same time, try to push the knot down in order to seal the pouch.

Once the quinoa is cooked and almost all of the liquids are evaporated, stir in the butter, finely chopped onion and the capers. Cover with a lid and keep warm. In the meantime, prepare the spinach and the eggs.

In a smaller pot, boil some water. When it starts boiling, place in the pouches and cook for about 3-4 minutes or until the whites are set but the yolks are still runny.

Then, arrange the quinoa into a bowl or on a plate and lay the spinach on it. Finally, top it with the poached egg and sprinkle with some pepper. Serve this simple yet tasty and healthy poached egg over quinoa for any meal of the day.
