  • 500 g chickpeas (cooked, canned)
  • 8 ginger slices (4 for asparagus, 4 for hummus)
  • 90 ml olive oil
  • 1 Tbsp of tahini paste
  • 2 tsps of dried thyme
  • sea salt
  • smoked paprika powder
  • 1 lemon (zest and juice)
  • 25 g almonds (toasted)
  • 14 green asparagus (trimmed)
  • 2 garlic cloves
  • 1 tsp of chili flakes

Creamy homemade hummus.

Begin by making hummus. Place chickpeas, 4 ginger slices, smoked paprika, tahini, lemon zest, lemon juice of half a lemon, some sea salt and 30 ml of olive oil in your food processor. Blend it until smooth and creamy. Transfer it to a bowl and set it aside.

Next, prepare the dressing. Combine 40 ml of olive oil, a pinch of salt, juice of half of a lemon, chili flakes and thyme in a jar and stir it well.

Then, drizzle some olive oil into a pan, add the sliced garlic, ginger and chili and let it sizzle for a minute. Add the asparagus spears in an even layer and sauté them for one to two minutes on each side. Once the green brightens and the asparagus are slightly charred, remove them from the heat.

Finally, spoon the homemade hummus onto the plates and place the lovely spiced asparagus on top. Drizzle the spiced green asparagus & hummus with the dressing and top them with toasted almonds. Maybe serve some homemade bread along with it.
