Hello, “meaters”! If you are a vegetarian, this is not for your eyes. This is for meat lovers only. What do you do if you get steak knives as a present? You make a steak, of course! Here we go. We went to the butcher and asked for some beef steaks. They were pretty big and boneless with not much fat. We also bought some rocket and cherry tomatoes, because I think that goes great with a beef steak. The rest of ingredients we already had at home.
Ingredients for pesto:
- 120 g rocket
- 3 cloves of garlic
- salt
- 30 g Parmesan cheese
- 6 Tsp of olive oil
Ingredients for the steak:
- 2 steaks (220 g each)
- salt and pepper
- 1 Tsp olive oil
Ingredients for the salad:
- ¼ iceberg salad
- 10 cherry tomatoes (red and yellow)
- a small piece of cucumber
- 50 g Goat cheese (or Feta cheese)
This recipe is really easy and quick to make. Begin with the salad and pesto. Wash and cut the iceberg salad, wash the cherry tomatos and cut them in half. You can cut the cucumber in slices or cubes, as you prefer. Put everything in a bowl. And add the cheese (cut in cubes).
For the dressing I decided to do the rocket pesto. You can check the pesto recipe in one of my previous recipes. The recipe is for basil pesto but it works for rocket aswell. You put all the ingredients (rocket, garlic, Parmesan, olive oil, salt) together and blend them well. Really easy as it sounds. I used most of it for the salad dressing and saved some for the steak. You can also keep it for later as a dip for snacks.
Now it’s time for the steak. With a kitchen brush spread some olive oil on the steaks, add the salt and pepper. Heat the pan and when it gets really hot put the stakes in (oily side down). Keep them like that for 4 minutes and then turn and leave them for 7 to 10 minutes. The meat will be tender and slightly pink in the middle. Well also it all depends how thick your steak is; the ones I bought were cca 1,5 cm thick.
Serve the beef steak with some salad and pesto on the side.
