Sweet potato wedges baked in oven, served with lamb lettuce salad. A great, quick and light meal.

Sweet potato wedges

How many times have you heard about sweet potatoes but have never tried them? Many people are sceptical about them. Don’t sure about the reason. Add them to your weekly menu. Sweet potatoes are very versatile. You can make many things with them. You can cook them, bake, roast them, and mash and you can also make sweet potato soup, fries or pies. They are a perfect snack or a side dish, but they are fantastic as the main meal. I find them amazing. Easy to prepare, colourful, healthy and very tasty. Let’s make the sweet potato wedges.

Ingredients for sweet potato wedges:

  • 1 big sweet potato
  • 2 cloves of garlic
  • bunch of parsley
  • 3 slices of cheese (Brie, blue cheese, grated cheese)
  • salt and pepper
  • olive oil

Peel the potato, wash it and cut it into wedges. Put the wedges in a pot and cover them with 2 cm of water. Bring it to a boil and let them cook for 4 minutes. Afterwards, remove them from the stove and drain the water. In a pan put some drops of olive oil and the chopped garlic. On top of that place the potato wedges in a way that they don’t cover each other. When you see that they get the crust turn them over. It shouldn’t take more than 4 minutes on each side.

When done put everything on a serving plate and sprinkle the sweet potato wedges with salt and pepper. Wash the parsley, chop it (thinly or not) and sprinkle it on top. At the end add the slices (or small cubes) of cheese.

A nice dish for cold evenings.
