Time to make some wraps! For a different, fast and good dinner or lunch try this out. You look in the fridge and don’t know what to do? Here is a great recipe what to do with a little imagination. I used the big tortillas and what I found in the fridge and my kitchen. You can buy the tortillas or make them from scratch. Whatever is more convenient for you. Wraps come in endless different variations and the base for it is a tortilla. Furthermore, this recipe shows you how to make broccoli frittata wraps.
The ingredients for broccoli frittata wraps (two of each) are:
- 4 tortillas
- 1 avocado
- basil leaves
- 2 Tsp of corn
- olive oil
- 2 eggs
- 2 spring onions
- salt and pepper
- 3 cloves of garlic
- 4 Tsp of beans
- 1 red onion
- ¼ of broccoli
- 2 Tsp of rice (uncooked)
- grated cheese
You can combine all these ingredients however you like. Basically, I took the first half of the ingredients for the first wrap and the second half for the other one.
So for my first version, I took the eggs and made kind of a frittata. Put a few drops of olive oil in a small pan, add the beaten eggs, on top sprinkle the corn and the spring onions. When it is almost done add the grated cheese, cover and remove from the stove. It should be ready in 2 minutes. If you want you can heat up the tortillas in the oven or in a pan. Take the frittata, cut it in half and place each half in the middle of the tortillas. On top add ¼ of avocado and some basil leafs to each one. Sprinkle with some salt and pepper and roll the wrap.
For the second version, you will need 2 small pans and a small pot. Cook the rice in the small pot. Chop the garlic and the onion and add them with some olive oil to the pan. When they become soft add the beans, stir a little and then remove it from the stove. In the second pan put the broccoli (that you have cut before into small trees), cover with 1 cm of water and let it simmer for 5 minutes. Take the tortillas and start adding the rice in the middle. Finally, add the beans and the broccoli and on top of that the avocado and grated cheese. Let’s wrap it!
These two broccoli frittata wraps look amazing and taste great, too.
