Avocado prickly pear Christmas snack

December is here and with it comes the Christmas time. And what we all do a couple of weeks before Christmas? We frenetically run from shop to shop in search for the perfect Christmas presents. We all deserve a break from all this running. A little break and a little treat will bring us calm and closer to Christmas. The snack is really simple. It is not the ingredient that makes it festive, but more the presentation itself. So let’s enjoy this avocado prickly pear Christmas snack.

As said, the snack is simple, easy to prepare and a joy to eat. It consists of a healthy avocado, an exotic cactus fruit, healthy seeds and some cream cheese. In order to make everything more Christmassy, I formed some stars using a fondant cutter.

Ingredients for 6 pieces of avocado prickly pear Christmas snack:

  • 1 avocado
  • 2 eggs
  • cream cheese
  • 1 cactus fruit/prickly pear
  • 6 slices of (chia seed) bread (ca 10x10cm)
  • sesame seeds

First, take the bread slices and spread some cream cheese on them. The bread slices I used were bigger, so I cut them in half. I used a paprika cream cheese. But you can use any cream cheese of your choice.

Next, peel the prickly pear. You will notice that you can find different colours of this amazing cactus fruit. I took the red one. I thought red colour is more like Christmas. Peel the cactus fruit and cut it crosswise into 0,5-1 cm thick slices.

Furthermore, cut the avocado in half, twist it, remove the pit and peel it. Slice it parallel to the cut part into 1 cm thick pieces.

Before you start making the stars, put the two eggs to boil. I cracked each egg separately into a cup covered with the transparent foil, added some salt and black pepper, brought the ends of the foil together, made a knot and put it to cook. I like this method; there is no peeling involved and you can actually see when the egg is cooked.

While the eggs are cooking, start making those fantastic stars. Take a couple of slices of the prickly pear and a couple of avocado slices (without a hole). I used a fondant cutter, but you can use a cookie form or simply a knife. It will maybe take longer to make them, but it will be worth it. And what is left of the prickly pear, just simply cut into small pieces.

At the end put all the puzzle pieces together. You can do different variations. On some bread slices put the green avocado and some the red cactus stars, on others avocado with green and red stars and on some the egg with some green and red stars.

Before serving the avocado prickly pear Christmas snack, sprinkle with some sesame seeds.
