These perfect bacon red pepper skewers are essential for the summer. Either you prepare them in a grilling pan or on a real grill. Is there anything more fun than eating yummy food off of a stick? I just love it! It can get a little messy but that’s also the fun part. Hehehe.

Skewers in summer are a must! And there is an unlimited number of variations. You can combine either using just one type of food (vegetables, meat, fish, fruits) or a mix of all. Today I will show you how to make these delicious bacon red pepper skewers. Have I got your attention already? However, there is more. Instead of buying thin slices of bacon, I chose a piece of side bacon. Why? I wanted the bacon to stay juicy on the inside and crispy on the outside.

I also used a bell pepper (which is rich in vitamin C), creamy artichokes and cute, little, silver onions. All these ingredients not only go great together but also make you experience a different kind of textures.

Ingredients for about 8 bacon red pepper skewers:

  • 300 g side bacon (1 cm thick slices or a whole piece)
  • 1-2 red bell peppers
  • 30-40 silver pickled onions (jar)
  • 8-10 artichokes (quarters from a jar)
  • olive oil

With a sharp knife cut the bacon into 1cm thick and 3-4cm long pieces. Wash, deseed and cut the bell pepper. You can use any pepper of any other colour, but the red has the highest percentage of vitamin C. Anyway, try to cut same-sized pieces as the bacon.

Furthermore, prepare a couple of paper towels. Place the artichokes and silver onions on them in order to absorb the oil and the liquid in excess. Now, take the wooden skewers. Thread the bacon along with onions, bell pepper and artichokes on them. I tried to place 2-3 bacon pieces on each skewer and alternated between the other ingredients. But you are free to use your ideas on how to create and mix them.

Then, prepare a grilling pan and turn on the heat (or preheat your grill). Brush the skewers with some olive and once the pan gets hot, put the skewers in. I would advise to put them into two groups of four. Making all at once, it would be too crowded and the skewers wouldn’t brown on all sides evenly. Grill them for about 8-10 minutes or until crispy and grill-brown on all sides.
