Banana carrot chicken with hazelnut rice

We found this recipe in a magazine. Banana and carrot together in a plate just sounded interesting and amazing. The creaminess of a banana and the sweetness of a carrot. The ingredients for two portions of banana carrot chicken are:

  • 150 g rice
  • 60 g  ground hazelnuts
  • 50 g butter (10 g is for the hazelnuts)
  • 200 g chicken
  • 1 onion
  • 300 g carrots
  • 2 tsp orange zest
  • 200 ml orange juice
  • 100 g Crème fraîche
  • 1 big banana
  • salt and pepper
  • 2 Tsp olive oil
  • 2 tsp curry powder
  • basil for decoration

Prepare two bigger pans, one small pan and a pot. In one pan heat the olive oil and add the chopped onion. When softened add the chicken and the curry powder and braise it until golden brown. You can add some liquid if it’s getting too dry. At the same time put some water in the pot, add some salt and put in the rice to cook.

When the chicken is getting done and the rice is cooking, peel the carrots and cut them into 0,5 cm thick slices. Take the other big pan, melt 40 g of butter, add the carrots and cook for a couple of minutes. Then add the orange juice and cook for 5 min longer or until the carrots become softer. Sprinkle with some pepper and salt, add the orange zest and remove from the stove. Now you can add the sliced banana and the Crème fraîche. Give it a little stir.

In the small pan melt 10 g of butter, add the ground hazelnuts and stir. It will be ready after 30 seconds. Then remove it from the stove. Rice should also be done by now. Rinse the rice and add the buttery hazelnuts to it.

Take a plate, first place in the hazelnut rice, then the chicken and the creamy banana carrot mix. Decorate the banana carrot chicken dish with some basil. Enjoy!
