Quiche with asparagus and chorizo

I have seen the recipe for a Quiche some time ago, but have never made it. One day I wanted something salty with a nice crust. For the first try, I didn’t make it from scratch. That means that I bought the dough already done. Quiche is nothing but a savoury pie. Main ingredients would be custard and cheese, vegetables and meat. The Quiche varieties change with culture, country and taste. I decided for a “Quiche au asperges”.

The ingredients that you will need are: 

  • 1 Quiche dough (one refrigerated roll)
  • 10-15 green asparagus
  • 2 eggs
  • 200 ml cream
  • 150 g grated cheese
  • 100 g of chorizo sausage (the salami kind, not the fresh sausage for cooking)
  • salt and pepper

Keep the dough in the fridge until you prepare everything.

Take the asparagus, wash them and snap the woody the ends off. The stem will break easily where the woody and tender part meet. Put some water in a pan (1 cm ) and blanch the asparagus until tender. That takes ca 4 minutes. Then remove from the pan.

In a bowl mix the eggs, cream, salt, pepper and the grated cheese. This is the mixture for the custard.

Now you can preheat the oven to 200° C and take the dough out of the fridge. Place the baking paper in the baking mould. I usually first crumple the baking paper and then spread it out again and place in the mould. Like that it doesn’t move. My baking mould was ca 30 x 20 cm big.

Roll out the dough and place it in the baking mould. Press well with your palms; especially the edge. I cut off some dough because it was too long at the borders and place it on top of the quiche just before the baking time. With a fork make some little holes in the dough at the bottom of the mould. That will allow the steam to escape and the dough won’t puff up. Cut the asparagus in pieces (I cut in 3-4 cm long pieces) and the chorizo in slices or cubes. Pour in the custard mixture, add the chorizo and the asparagus. Place the 2 stripes of the dough on top (if you cut it off like me).

Put it in the oven on the middle rack for 30 minutes.

Voilà! You can serve it warm or cold. Enjoy!
