Did you run out of ideas about what to prepare for dinner or lunch? Check out this super-easy broccoli pancake pizza. The dish looks like a pizza (more like pizza bianca) but tastes like a pancake. Making pancakes is something we all love. And it takes no time to make them. What is the most usual thing we put on a pancake? Most of the times we use marmalade, chocolate or fruits. But not this time.

This broccoli pancake pizza has a different garnish. There is broccoli, yes. Moreover, I didn’t want to use the typical pizza tomato sauce, so I used sour cream instead. On the sour cream base, you put broccoli, nuts and Feta cheese. Isn’t this simply the best combination?

I also tried to make the pancakes thicker, because I wanted them to look more like a pizza. You know what I mean; a crêpe would be too thin and an American pancake would be too thick. Around 4-5 mm is just perfect.

Ingredients for around 6 portions of broccoli pancake pizza:

  • 2 eggs
  • 150 g flour
  • 200 ml milk
  • 50 ml mineral water
  • olive oil
  • salt and pepper
  • 500 g broccoli
  • 200-250 g sour cream
  • 4-5 stems parsley
  • 100-150 g Feta cheese
  • nuts (pine nuts, walnuts, cashew)

First of all, make the pancakes. In a bowl combine eggs, flour, salt, milk and water. Whisk until well combined and fluffy. My batter was slightly between runny and thick; so slow running batter is perfect. Preheat a larger frying pan (around Ø 30 cm) and grease it with a drop or two of olive oil.

Once the pan gets hot, pour in enough batter to make one pancake (usually one ladle is just perfect) and keep tilting the pan in order to spread the batter evenly around the pan. When it is not wet and runny on the top, flip it over for 30 seconds or until golden brown. Continue until all batter is used.

In case you’ll get too many pancakes, simply keep them for later. You can make a dessert or a snack the day after.

Preheat the oven to 200ºC. Cut the broccoli into small florets, wash them and blanch for 2 minutes. Place two or three pancakes (depending on the space) on the baking tray and spread a spoon or two of sour cream on each of them. Furthermore, sprinkle with black pepper, top with broccoli florets, crumble some Feta cheese and add the nuts of your choice.

Put in the oven and bake for 10 minutes.

Finally, serve this delicious broccoli pancake pizza directly on a cutting board. Don’t forget to sprinkle it with some fresh parsley and as a final touch, drizzle it with some olive oil. Now it’s ready to serve. You can either cut it in quarters or leave it as a whole.
