Cobb salad with mustard dressing

This Cobb salad has everything you could want; soft lettuce, spinach, pickles, radishes, pickled silver onions, avocado, chickpeas, boiled eggs and bacon, all tossed in a honey mustard dressing. It makes a perfect meal any day, any time.

I am certain you’ve heard of or had a Cobb salad before. Right? Cobb salad is an American dish, mostly enjoyed as a main meal. As you can imagine, there are quite some stories about its origins. One says it was named after Robert Cobb, who put it together because he was simply hungry. So they say. But then, I asked myself, why he took the time to arrange everything so nicely? Wink.

Do you know what makes it so unmistakable? Imagine the nicely arranged vegetables, chicken, eggs, blue cheese and other ingredients. They are all stacked up in rows. However, if you are more of a chunky, chopped salad kind of person, feel free to make it your own. It’s easy to put together and its colours look stunning. Everything that you see and taste is fabulous.

My variation

My variation of Cobb salad is loaded with tender lamb’s lettuce, baby spinach, boiled eggs, crunchy pickles and lightly spicy radishes, pickled onions, salty bacon, creamy avocado and chickpeas. A plate of textures and flavours. In one word: Gorgeous.

The classic recipe includes poultry as well. Therefore, feel free to add chicken or turkey to your Cobb salad. It is a perfect way to use your chicken leftovers.

I enjoy making salads and pairing them with different fruits, cheeses, meats or bread. Last but not least, even the salad dressing recipe is as simple as a dressing can be. I combined two different mustards (Dijon and wholegrain mustard), a bit of honey, lemon juice, salt and olive oil. This dressing tastes fresh with a bit of heat from the mustard. It’s perfect for any salad.

INGREDIENTS FOR A COBB SALAD WITH MUSTARD DRESSING:

  • 2 handfuls of lamb’s lettuce or corn salad
  • 2 handfuls of baby spinach
  • 3 radishes (sliced)
  • 8 silver pickled onions
  • 5 pickles (sliced)
  • 1 avocado
  • 5 slices of bacon
  • 2 Tbsp of chickpeas
  • 2 boiled eggs
  • half a lemon
  • 1 Tbsp of honey
  • 2 tsp of Dijon mustard
  • 2 tsp of wholegrain mustard
  • a pinch of salt
  • 2 tsp of olive oil
You are looking at a Cobb salad: halved boiled eggs on a bed of tender lettuce, chickpeas, creamy avo, paired with bacon, pickles, onions and radishes. All tossed with a mustard dressing.

To begin, wash and drain the lettuce and baby spinach. Then, slice the radishes and pickles. In a non-sticking pan, prepare the bacon. Lay the bacon slices in a cold pan and cook them until curled up and crisp. Transfer to a paper towel to absorb the extra grease.

Boil two eggs. In the meantime, prepare the dressing by combining honey, mustard, olive oil and fresh lemon juice. Season it with salt and whisk. Slice the avocado and squeeze some lemon on it.

Finally, arrange all the ingredients into a bowl or a large serving plate to form the Cobb salad. Serve it with a slice of homemade bread or some cheese.
