Let’s not forget the apple and carrot, both packed with vitamins important for our body health. The surprise of this soup is the topping. And, no, it’s not bacon. Wink. I am talking about fresh figs. Oh, I love them. Figs are a wonderful summer fruit with a soft outer layer and a sweet inside filled with hundreds of tiny seeds.

Also, figs are packed with antioxidants and nutrients. They are particularly rich in copper (good for metabolism and blood cells) and vitamin B6 (for proteins, brain health). And they taste delicious!

Ingredients for a celery apple soup:

  • 6-8 celery stalks
  • 2 red onions (chopped)
  • 1 large apple (peeled, cubed)
  • juice from one lemon
  • 1 carrot (diced)
  • salt
  • 2 tsp of cottage cheese (yogurt or sour cream)
  • 1 fresh fig (garnish)
  • dill

To begin, wash and trim the celery stalks. Chop them into 1 cm large chunks. Peel and chop two red onions, was and dice the carrot.

In a medium pot, drizzle some olive oil. Once hot, add the onion and celery. Cook for 3-5 minutes. Then, peel and cube the apple. Stir it in the pot, add the lemon juice and cover with water. After it starts boiling, reduce the heat, cover with a lid and let it simmer until tender.

Furthermore, blend with an immersion blender (or carefully pour in a stand mixer) until it reaches the desired consistency. Put the pot back on the stove, bring to a light simmer, season to taste and stir in the diced carrots. Cook for another 5 minutes.

Finally, divide the celery apple soup between the bowls, garnish with a spoon of cottage cheese or yogurt and top with fresh fig and some fresh dill. This healthy meal is perfect as a light mid-week dinner or lunch.
