Chimichurri sweet potato steaks

You are going to love this three-component dish. Chimichurri sweet potato steaks are a combination of roasted sweet potatoes, roasted pepper and a flavourful green sauce, chimichurri. Fresh herbs, such as parsley, coriander and mint combined with lemon juice and garlic make a perfect refreshing herbal topping.

Potato can be so much more than a classic. Potato wedges, cubes, chips, mashed potatoes, boiled potatoes, potato salad, roasted potatoes, Hasselback potatoes, and potato fries are just some of the ways to enjoy them. And I love them all.

And what do you think of these sweet potato “steaks”? You can also call them slices. You can cut the potato either into long oval slices (steaks) or into rounds. Make sure they are 1-1,5 cm thick to hold the shape. Brush them with some olive oil, season with salt and push them into the oven. So easy, so simple. But so delicious!

You can grill them or roast them in a pan or oven. In order to enhance the sweet potato steaks, I added some delicious sauce, the chimichurri sauce. Chimichurri! What a fun word. Try to say it loud with a long rrrrrrr. Wink.

But, let’s go back to our chimichurri. Oh, this green sauce is amazing. In fact, it’s not only delicious and easy to make but it can also add flavour and elevate the flavour of whatever you add it to. Just like said, amazing. And, everyone can make it in a matter of minutes. So what are you waiting for? Wink.

This delicious Argentinian herbal sauce can be green or red. They are both rich in fragrances. On one hand, the green basic sauce is made with parsley, oregano, olive oil, lemon juice and chili. The red, on the other hand, is made of roasted red peppers, smoked paprika, olive oil, garlic, chili flakes and parsley. It is already on my to-do list. Wink.

It is a short recipe list, which makes it perfect for any day of the week, either for lunch, dinner or lunch to go. Also, you can easily make it one day in advance. As a result, it will develop even more flavour. Yummy.

The chimichurri in this recipe includes parsley, coriander, mint, garlic, olive oil, lemon juice and chili flakes. A bit different from the basic version, it is packed with bright herbaceous flavour with a bit of spicy and refreshing note. Instead of fresh lemon juice, you can use wine vinegar, too.

Moreover, you can use it as a sauce, marinade or a condiment for meat, fish, shrimp or any roasted vegetable. It is very versatile.

Ingredients for 2-3 portions of chimichurri sweet potato steaks:

  • 1 large sweet potato
  • 2 bell peppers
  • half a bunt of coriander (whole)
  • half a bunt of parsley (whole)
  • 6-7 stems of mint (only leaves)
  • 2 garlic cloves
  • 1 lemon or lime
  • 20-30 ml olive oil
  • 1 tsp of chili flakes
  • sea salt

To begin, preheat the oven to 200° C and line a baking sheet with baking paper.

Peel the potato and cut it, lengthwise, into 1 cm thick long slices or rounds. Lay them in a single layer on the baking sheet. Wash the bell peppers, halve them and add to the potatoes, skin up. Drizzle everything with a little olive oil, season with salt and put in the oven for 20-25 minutes or until tender.

In the meantime, make the chimichurri. Combine coriander, parsley, mint leaves, garlic, chili, lemon juice, olive oil and two pinches of salt in a blender. Blend for 30 seconds or until a desired consistency.

Finally, place the sweet potatoes onto the serving plate, drizzle them with chimichurri and top them with the sliced peppers. Serve these chimichurri sweet potato steaks at your dinner or for a light lunch.
