Everyone loves banana bread. Do you? And I bet it has happened to every one of us before, ending with a couple of overripe bananas sitting in a corner of your kitchen. Hmm, what to do with them? The best answer is, to bake a loaf of banana bread.

Banana bread is a great way how to use ripe bananas and create a great snack, too. Also, as I already mentioned and I will say it again, it is incredibly easy to make. You mix all of the ingredients in one bowl, pour it into a baking pan and bake. Super straightforward, I would say. Wink.

More, to complement the banana and coffee I used two of my favourite ingredients: cinnamon and walnuts. I would say, a classic. However, be free to add any other nuts, such as hazelnuts, almonds or pecans. You can either toast the nuts or use them as they are. The important thing is to add some crunch to your banana bread.

Banana bread can be left simple as it is, naked. Wink. Or, you can also glaze it with caramel, chocolate, ganache or icing. I decided to cover it with crumble. Yey. I love crumbles. These are packed with cinnamon as well. I think it pairs well with bananas, walnuts and coffee.

Ingredients for a Loaf of crumble coffee banana bread:

  • 2 ripe bananas
  • 2 eggs
  • 30 g butter (melted but not hot)
  • 40 g coconut oil (melted but not hot)
  • 2 tsp of cinnamon
  • 80 ml strong coffee (espresso at room temperature)
  • 80 g ground hazelnuts
  • 50 g coconut flour
  • half a tsp of baking powder
  • a third tsp of baking soda
  • 100 g walnuts
  • 100 g dark chocolate (chopped)

Ingredients for the crumble:

  • 50 g almond flour
  • 30 g coconut flour
  • 30 g brown sugar
  • 1 tsp of cinnamon
  • a pinch of salt
  • 40 g cold butter (cubed)

To begin, preheat the oven to 180°C and line a bread loaf pan or any baking pan with parchment paper.

For the crumble, in a bowl, mix together almond flour, coconut flour, sugar, cinnamon, a pinch of salt and cubed cold butter. Rub the mixture between your hands until all combined and crumbles form. Put aside until ready to use.

Next, in a bowl, using a fork, mash the bananas. Then, add the eggs, melted butter and coconut oil, cinnamon and espresso. Stir until thoroughly combined.

Afterwards, add the coconut flour, ground hazelnuts, baking powder and baking soda and stir until combined. At this point, add the chocolate chunks and walnuts and fold them to combine.

Pour the batter into the loaf pan, cover with crumbles and put in the oven on the middle rack for 40-45 minutes. If the crumbles turn too dark, cover them with a piece of aluminium foil for the rest of the baking time.

After the crumble coffee banana bread is ready, remove it from the oven and cool it for 10 minutes in the pan. Then, carefully remove the banana bread from the pan and allow it to cool completely on a wire rack.

Finally, slice your crumble coffee banana bread and serve it with any type of coffee or a glass of milk.

Enjoy.
