Fruity strawberry smoothie bowl

Thinking of summer, I came up with this fruity strawberry smoothie bowl. About 80% of it is strawberries. Yummy, right? And the peach touch enhances the strawberry flavour. Moreover, if you use a white peach or nectarine, the aroma will be even more fabulous.

Thanks to the frozen banana, the texture gets smooth and creamy, it’s almost like ice cream. And the amazing toppings include the crunch and freshness.

Ingredients for 2 portions of fruity strawberry smoothie bowl:

  • 500 g of fresh strawberries
  • 2 peaches
  • ½ frozen banana (cut and then frozen)
  • 2 Tbsp of coconut milk
  • half of a handful strawberry mint leaves (or a couple of any mint leaves)
  • 2 ice cubes

Toppings for the fruity strawberry smoothie bowl:

  • 3 Tbsp of homemade granola
  • 2-3 tsp of Chia seeds
  • coconut chips
  • 1 fig (cut in quarters)
  • some strawberry mint leaves

Wash the strawberries and the peaches. Cut off the stem of each strawberry and remove the pit from the peaches. Put everything in a blender while adding also the frozen banana rounds, coconut milk, and the mint. I used the strawberry mint, that I found at the local market. This mint has a mild minty flavour with a nice strawberry aftertaste.

At the end add the ice cubes and blend for about 30 seconds or until you get a nice smooth texture. Like I mentioned before, the ice and the frozen banana will give a great ice cream touch to the smoothie.

Divide the smoothie into two bowls and go crazy with the toppings. You can use what I used or any of your choice.

For the fruity strawberry smoothie bowl, I decided for homemade granola and coconut chips. They will both give a great crunch. Then I used a fresh sweet fig, some Chia seeds and a couple of fresh strawberry mint leaves. The aromas will just amaze you!
