Mango-coconut-raspberry popsicles

Make your own fruity popsicles. These mango-coconut-raspberry popsicles are a healthy and refreshing treat idea. They are made out of only real fruits and no added sugar in just 5 minutes (plus the freezing time) and are dairy-free. This is an easy and fun summer recipe idea, which keeps you cool during the hot months.

Summer is here and all around the internet and in magazines, we see gorgeous pictures of delicious ice cream. Of course, we are all enthusiastic about making ice cream at home. Therefore we read all the articles about how delicious, healthy and most importantly easy to make the ice cream is. However, almost always, in the end we come to a disappointing surprise. You need an icecream machine. Can you see yourself in this? Wink.

Well, let me tell you a couple of things. Firstly, you DON’T need an icecream machine to make delicious icecream. Secondly, you can make ice cream without using, eggs, milk or cream.

A real summer treat is what we are aiming for in this recipe. These mango-coconut-raspberry popsicles are healthy and delicious. In fact, there’s no additional sugar, no milk, no cream, no yogurt, no egg and no water. In other words, they are made out of pure fruit puree.

Sometimes the solution is standing the whole time in front of our nose. But, we don’t see it, because it’s to darn simple. We love to complicate things. Mankind is a weird phenomenon.

Wait, before you say something. I know what you think: “Great, I don’t need an ice cream machine. Wait. What?! I need popsicle molds?!” No need to worry at all. I have a perfect solution for you. If you don’t have molds, you can simply use small empty yogurt cups. Although, I highly recommend buying the molds, because they come really handy and besides they are really cheap, too. And, if you don’t have wooden sticks, simply stick a teaspoon in it. Voila! Problem solved. Wink.

Fresh fruits and bright colours

Furthermore, going back to our mango-coconut-raspberry popsicles. You can use any fruit you like or combine different fruits together. For more texture, you can combine fruit puree and some fruit chunks, too. Try to combine different fruits and different colours. As a result, you’ll get vibrant ice popsicles which will brighten up your summer days and nights.

Look at these colours. Raspberry-pink and mango-orange were meant to be together. Wink. Not only the colours but also the flavours complement each other well. With every bite, you’ll experience something sweet, something sour, something extremely fruity and refreshing.

Coconut flour

But I wanted more. Can there be more? Yes. In order to add also some protein, I used coconut flour. Coconut flour is made entirely out of a coconut. Consequently, it’s completely gluten-free and it differs from other normal flours. It’s a good source of fibre, plant-based iron and protein.

Besides being healthy, it’s very versatile, too. Coconut flour can be used in either sweet or savoury recipes, such as smoothies, all baked goods, porridge, soups and stews, burgers, pizza crust and in ice popsicles. In other words, it can be used in almost everything you can think of. That’s just amazing. Wink.

How to store fruity popsicles

You can eat as many of these mango-coconut-raspberry popsicles you want without having a bad feeling. Wink. However, if you want to store them, remove them from the molds, place on a baking paper, freeze completely and then place them in a plastic food bag. You can keep them like that for a couple of months.

Ingredients for 6 mango-coconut-raspberry popsicles:

  • 1 ripe mango
  • 1 Tbsp of coconut flour (optional)
  • 2 tsp shredded coconut flakes
  • 12-15 raspberries (frozen or fresh)

To begin, wash and cut the mango. Cut along the stone on both sides. You should now have three pieces. Take the middle piece, with the stone, and carefully cut off the flesh around the stone. If the mango is really ripe, you can just squeeze off the whole pulp, simply with your hands.

In order to remove the mango flesh from the two halves, simply use a spoon to scoop it out. Furthermore, put the mango in a blender or food processor, add a spoon of coconut flour and some shredded coconut flakes and blend until smooth.

Then, prepare the popsicle moulds and frozen raspberries. First, add a spoon or two of mango puree in each mould. Second, drop in a couple of frozen raspberries and cover with mango until you reach the top. Third, place the wooden sticks in the middle and sprinkle the out-peeking part of the popsicle with shredded coconut flakes.

Place the mold in the freezer for at least 5 hours or, even better, overnight.

Finally, serve the mango-coconut-raspberry popsicles on a hot summer day to cool you down or just as a simple healthy snack. Making delicious and healthy ice cream just got easy and maybe your new favourite way how to enjoy fresh fruits, too.
