Banana ice cream.

Banana ice cream

Hi, PassionSpoon readers! I have a treat for you today. Are you ready to make a banana ice cream at home? All by yourself? Of course, the answer is YES. How to make an ice cream without a proper ice cream machine? Easy. All you need is a blender, some frozen bananas and a freezer.

For the ice cream, I used only 50 ml of whipping cream and bananas. This banana ice cream does not include any condensed milk or additional sugar. I was totally happy with the result and for sure I am going to try different ice cream recipes and different flavours.

Anyway, let me first tell you how to make this banana ice cream. Well, there’s not much to tell. You’ll see how easy it is. Before we start, just a couple of tips for you. Freezing the bananas and hardening the ice cream takes some time. Consequently, I would suggest making this ice cream in the morning if you would like to eat it in the evening. It should be at least three hours in the freezer or otherwise overnight. But the question is, will you manage to stay another day without homemade ice cream?

Ingredients for about 800-1000 ml of banana ice cream:

  • 4 ripe bananas (big)
  • 50 ml of whipping cream
  • frozen berries for toppings (optional)

As I mentioned earlier in this recipe, you will need frozen bananas. Before freezing them, cut them into 0,5-1 cm thin round slices. I divided the banana slices in between three food freezing bags and I placed them in one single layer. Like that the pieces won’t stick together and it will be easier to blend. Place them in the freezer overnight.

When you are ready to make the banana ice cream, take the frozen bananas out of the freezer and let them partly defrost (about 15 min). Then put all the banana slices in the blender, add the whipping cream and blend. Use a spatula or a wooden spoon to push the bananas down, but be careful not to touch the blade. Keep pulsing until you get a nice smooth and thick consistency.

Furthermore, pour the mixture into an air-tight container and put in the freezer for at least three hours or overnight. Now you can only plan what to use as a topping. I used frozen berries and some marinated green walnuts.

Finally, take the banana ice cream out of the freezer and give it a check. If it’s too hard, leave it on the kitchen counter for 15 minutes. If it’s still soft put it back in the freezer. Once it’s ready, scoop it with a spoon. Remember to always wet the spoon before scooping the ice cream.

Anyway, back on the track. For the final touch add some frozen berries. You will love it, your kids will love it and you are going to make it again and again. The banana ice cream will enchant you!

Enjoy!
