Matcha doughnuts

The year 2017 is here and the longest night of the year is over. We celebrated at our friend’s place and since everyone brought something to the party we decided to make some dessert. The original dinner topic was Japanese, so I thought of doing something with matcha. Matcha is a stone-ground Japanese green tea. It’s really rich in antioxidants and has great benefits in metabolism. In the end, I decided to make matcha doughnuts.

The big difference of my version was not to deep fry them but to bake them. This method is quicker and easier. And the taste will be a little different too. It will remind you of a cake. The doughnuts will be moist, less sweet and less greasy.

The ingredients for 12 small doughnuts:

  • 190 g of flour
  • 1 tsp of baking powder
  • ½ tsp of salt
  • 12 g or 2 Tsp of matcha
  • 2 eggs (L)
  • 160 ml coconut milk
  • 70 g of butter (melted)
  • 4-5 Tsp of honey

I used a silicone doughnut mould to make the doughnuts. Easy to use and the doughnuts are just perfect. You can make 6 pieces with one, so I used it twice. Grease the moulds with some coconut oil and preheat the oven to 220ºC.

In a large bowl mix all the dry ingredients (flour, baking powder, salt, matcha). Whisk for some seconds. Then add the beaten eggs, coconut milk and the melted butter. Whisk well to combine everything. At the end add the honey. I added 5 spoons, but you can add less or more. It depends on how sweet you want them to be.

With a pastry bag (or just a normal plastic bag with the tip of one corner cut off) pipe the dough into the mould. Fill each mould ca ¾ full and put it in the oven on the middle rack. Bake for 8 minutes. After 8 minutes take them out and leave them in the mould for 10 minutes. After that transfer them on a baking paper or on a wire rack to cool down completely.

I also decided to make a chocolate glaze. We had a lot of chocolate from Christmas so I melted one Santa in a double boiler. Dip the doughnuts one by one into the melted chocolate and leave them on the baking paper. Let the chocolate harden.

You can use different chocolates and toppings or just leave the matcha doughnuts plain.
