Piña Colada porridge

Piña Colada porridge is a perfect idea for a healthy start of the day or for a quick supper. A warming bowl of oatmeal with sweet-grilled pineapple is everything that you need to satisfy your hunger on a winter day.

Some people find porridge boring and bland. However, I find it excellent. You can mix the toppings and make a new version every single day. In addition, it’s not only quick and easy to prepare but it’s healthy as well. Porridge is rich in vitamins, fibres and minerals. And let’s not forget that it will keep the hunger away for several hours.

Tasting this delicious Piña Colada porridge takes you on an exotic holiday! All my favourite ingredients are in this bowl of happiness. As mentioned before, there is the sweet pineapple, creamy coconut milk (I always take the one in a can), vanilla and some more coconut (shredded flakes). Yummy! And the best thing is that the pineapple comes from the grill! What a delight!

I love fresh pineapple, but when grilled it gets triple the flavour. It tastes absolutely amazing!

Ingredients for 2 portions of Piña Colada porridge:

  • ½ pineapple (fresh)
  • 1-2 tsp coconut oil
  • 120 g porridge oatmeal
  • 360 ml of coconut milk
  • a couple of drops of vanilla extract
  • pinch of salt
  • coconut flakes (shredded)

First of all, cut the pineapple in half and “peel” it. Then cut it into 1 cm thick round slices. I got four round slices out of half a pineapple and I cut out the middle part of each round. Save the other half for more delicious recipes.

Second, prepare a grilling pan and a saucepan. While you preheat the grilling pan, add the porridge oatmeal, coconut milk and vanilla to the saucepan. Don’t forget to add a pinch of salt! Maybe it sounds weird, but the salt will add the depth to the porridge and at the same time, it will elevate the sweetness of the pineapple or any other topping.

Bring the milk to boil, then lower the heat and simmer for at least five minutes. After five minutes the oatmeal starts to soften. It is a matter of taste how much longer you should cook it. I would say between 6 and 8 minutes. Stir from time to time and don’t let it stick at the bottom.

At the same time, spread some coconut oil on the pineapple slices and lay them on the grilling pan. Remember, the pan should be very hot. Once you lay the slices, try not to move them for 3 minutes, in order to get a nice strips pattern. Then flip it over for another 3-4 minutes or until nicely caramelized.

Serve the Piña Colada porridge in a bowl, topped with grilled pineapple. For the final touch, sprinkle with some coconut flakes. Make porridge and go crazy with the toppings!
