Matcha hearts with granola topping

Do you still remember the matcha doughnuts? No? No worries, just follow this recipe and everything will be great. As I said, I have made the doughnuts before, but this time I decided to use a delicious crunchy topping and changed the shape into a more “sweet-looking” one. You will love these matcha hearts with granola topping.

These ingredients are for ca 12 pieces:

  • 190 g flour
  • 2 Tbsp of matcha powder (ca 12g)
  • ½ tsp of salt
  • 1 tsp of baking powder
  • 2 eggs
  • 160 ml of coconut milk (creamy one)
  • 60 g of Ghee or coconut oil or butter (melted)
  • 4 Tbsp of honey
  • granola
  • coconut flakes
  • chocolate (melted, for the glaze)

How to make it:

The first thing you’ll need to is a (silicone) heart-shaped muffin mould that makes every muffin look just perfect. I think silicone moulds are really great, easy to use, to wash and to store. For the start, grease the muffin moulds and put on a side. Preheat the oven to 220º C.

In a large bowl combine all the dry ingredients (flour, salt, baking powder, matcha powder) and give it a stir or two. In another bowl mix together 2 eggs, milk and the melted butter or Ghee. Add the liquid mixture to the bowl with the dry ingredients and mix them well together. At the end add the honey and whisk well to combine all the ingredients.

When you get a smooth mixture, it is time to fill the muffin moulds. Fill each mould up to 2/3, because the muffins will rise. I put half of the mixture in the heart-shaped moulds and the other half in the regular doughnut moulds.

And now leave everything on the middle rack of the oven for 7-8 minutes. After that, take them out and leave them on the kitchen counter for another 10 minutes before taking them out of the mould. Then let them rest on a wire rack to cool down completely.

At the end dip them in the melted chocolate to get a nice glaze. This time I sprinkled the doughnuts also with coconut flakes. You should do this while the chocolate glaze is still soft. Like that the toppings stick better on. For the hearts I decided to add the granola topping, to give that extra crunch that everyone loves.
