Potato Nachos and beef

Potato and meat sound like a normal, traditional meal. How many times have you seen on the menu potato and steak? Don’t get me wrong, I like the dish, but why not do it a little differently. Try the potato nachos and beef in a skillet or in a simple baking tray. Consequently, you will eat a familiar food in a new way. It is not too difficult to make and it tastes delicious.

Ingredients for 2-4 portions of potato nachos and beef:

  • 7 medium potatoes
  • 1 red onion
  • 250 g beef steak
  • 2 tsp sweet red paprika
  • grated cheese
  • 100 g Feta cheese
  • thyme
  • 150 ml red wine
  • salt and pepper
  • olive oil

Wash the potatoes. There is no need to peel them if you bought “young” potatoes. Therefore, cut them into 0,5 cm thick slices and put them in a large bowl. Then add to the potatoes some olive oil, salt and pepper and 2 tsp of sweet red paprika and mix well all together.

Turn the oven on to 230ºC. Take a sheet of baking paper and place it on a baking tray. Place the potato slices on it; one next to each other. Put the tray in the oven on a middle rack for 20 minutes.

In the meantime, when the potatoes are baking, prepare a skillet or a ceramic baking tray and sprinkle it with some olive oil.

And finally, it is time for the steak. It will take ca 16 minutes, with the resting time. Season well the steak with some olive oil, salt and pepper. Put it in a pan, only when the pan gets really hot. Cook on high heat for 3-4 minutes on each side. I added some red wine when all the liquids were evaporated. As a result, the wine gives a nice touch to the dish. When the steak is done (medium rare), remove it from the pan and lay it on a cutting board. Leave it to rest for ca 10 minutes. The potatoes should also be ready by the same time.

Furthermore, take the potatoes out of the oven and place them in the skillet or baking tray. Arrange them into a heap, so that each potato slice covers 1/3 or ½ of the previous slice. In addition, top it with chopped onion and crumbled feta cheese. Cut the steak into slices or 2 cm cubes and lay on the potatoes. Add the thyme (generously) and cover everything with grated cheese. Finally, put the tray back in the oven for 10 minutes on 230ºC.

Serve the potato nachos and beef with some sour cream or Crème fraíche on top.
