Red beans potato chicken

This was one of those days with too many ideas of what to cook. When you don’t know what you would like, you start thinking of everything….maybe pasta, meat, hmm grilling, veggies, something spicy, chilli, Mexican, etc. Consequently, or you go crazy or you take a piece of each idea and make a new dish. Let’s call it brainstorming or a tornado in the kitchen. I picked something red, something pink, something orange, something white and of course something green. Check out this red beans potato chicken with avocado.

With these ingredients you will be able to do 4 portions of red beans potato chicken:

  • 400 g chicken
  • 2 Tsp of olive oil
  • 1 big sweet potato
  • 1 can of kidney beans (or any beans you like)
  • 2 avocados
  • 1 red onion
  • 1 shallot
  • 2 spring onions
  • 600 ml chicken broth (or veggie)
  • 4 Tsp of sour cream

Peel the potato, cut it in 1 cm cubes or slices and put to cook. The sweet potato cooks really quick. Check 5 minutes after the water starts to boil. If the potato is soft discard the water and put it aside. Furthermore, in a pan preheat the olive oil. Chop the onion and put it in the pan. When it starts to soften add the chicken and braise until golden brown. Take the chicken or veggie broth and put it in a pot. Bring it to boil. Remove the pot from the stove.

Now all the ingredients come together; take the kidney beans, sweet potato and the chopped shallot and put them in the broth for 5 minutes (the time to cut the avocado and to prepare the plates). Cut the avocados in halves and then in slices or cubes. Each plate gets half of an avocado.

Finally, time to take the plates. Take the deep ones. With a ladle pour the broth in the plate; 1 or 2 ladles will be ok. First try to catch all the goodies in the broth and after that add the liquids. On top of that put the braised chicken (don’t forget the caramelised onion) and the cubes of avocado. In conclusion, sprinkle the plate with some chopped spring onion and 1 spoon of sour cream.
