Salarico salad

I’ve been using the oven a lot lately. Time to change that. It’s time for a salad now! This salad will bring summer to your table and on your plate. It’s quick, fresh, colourful and healthy. This recipe is for two portions. You might double it for four or split for one. You will also need to marinate the chicken at least 30 minutes before lunch/dinner time. Get ready to prepare your Salarico salad today.

Here is what you need:

  • 1 green salad (a crunchy one)
  • ½ avocado
  • 2 chicken breasts (150 g each)
  • 6 mandarins (3 for salad, 2 for the marinade, 1 for dressing)
  • 1 lemon
  • 3 Tsp of corn
  • ½ yellow bell pepper
  • salt and pepper
  • olive oil
  • 3 Tsp fig dressing (or a fruity vinegar)

How to make it:

Put the chicken to marinate. Squeeze 2 mandarins and a lemon, add salt and pepper and put everything in a plastic bag for food. Place in the chicken breasts, close the bag and put it in the fridge for at least 30 minutes.

Clean and wash the green salad. I bought the Salarico. It is crunchy and has an amazing green colour. It’s a crossing between iceberg lettuce and romaine lettuce. Cut it in “bite” sized pieces. Wash the bell pepper, cut it into strips or cubes and add to the Salarico in the salad bowl.

Furthermore, peel the 3 mandarins and clean off all the remainings of the pith (That’s the white bitter stuff from the peel). Add them to the salad bowl, followed with 3 spoons of corn.

In a pan heat some olive oil or coconut oil. Take the marinated chicken breasts and put them in the pan on medium heat. After 8 minutes turn the chicken and leave it for another 6 minutes. You can also add some lemon or mandarin juice if it’s necessary. When the chicken is done, turn the heat off, remove the pan from the stove and cover the chicken with a piece of aluminium foil to keep it moist.

While the chicken rests you can cut the avocado and add it to the salad. In a small bowl squeeze the last mandarin and add 3 spoons of fig dressing with some pepper and salt. Instead of fig dressing, you can also use a passion fruit vinegar or something similar. Something with some sweetness. Or you could just add some honey to the dressing. Be creative.

Put the dressing in the salad and mix everything well together. Place the Salarico salad on a plate. In conclusion, cut the chicken breasts into 2 cm thick slices and put them on top of the salad.
