Salmon horseradish gratin

Hello lovely readers. When you are looking for a quick lunch or dinner recipe, decide for a salmon fillet. I love it. This time I made salmon horseradish gratin. It’s quick, easy and delicious. As a side, I made some creamy polenta and crunchy carrot slices.

This salmon horseradish gratin is so simple that everyone can make it in their own home kitchen. As I always say, you can adjust the recipe according to your preferences. Take out something you don’t like or add something that you like.

Ingredients for two portions of salmon horseradish gratin:

  • 2x 150 g salmon fillet
  • some olive oil
  • 2 Tbsp of breadcrumbs
  • 2 Tbsp of horseradish (from the jar)
  • 200 g polenta
  • 100 ml cream
  • 150 ml coconut milk
  • pink and black pepper
  • 1 carrot (I used the purple one)
  • salt

First, prepare the polenta. Pour the coconut milk and cream with a pinch of salt in a small pot. Once it starts to simmer, add the polenta and with continuous whisking cook it until smooth and creamy. If it’s too stiff, add some liquid. If it’s too runny, cook it for a couple more minutes. Then put aside.

Preheat the oven to 180ºC. Prepare a baking dish and a frying pan. If you have an iron skillet, you can easily use just that. Now prepare the crunchy carrots. How to make those thin and almost see-through slices? Easy. Simply use a potato peeler. Put the carrot slices in a small bowl with a pinch of salt and a spoon of olive oil. Mix and leave aside.

Drizzle the pan with some olive oil. Only when it gets hot, put the salmon fillets in (skin down). Leave them in the pan for about a minute, in order to get a crispy skin. In the meantime prepare the gratin. In a small bowl mix the horseradish and breadcrumbs.

Once the salmon’s skin is crispy transfer the fillets to the baking dish. If you use an iron skillet, you can skip that step. Cover the fillets with horseradish gratin, place the baking dish or the skillet on the middle rack in the oven and bake for 6-8 minutes. Two minutes before the salmon is done, put the baking dish on the top rack. Like that it will get a nice crust.

Serve the salmon horseradish gratin, sprinkled with pink and black pepper, to the fish lovers. They are going to like it. The creamy polenta and the crunchy carrot are a nice contrast to the soft salmon.
