Sausage thyme pasta is a simple and quick pasta recipe for every day. Aromatic salsiccia, fresh thyme, white wine, parmesan, chili and coconut milk are among the ingredients that make the dish so special. The slightly salty squid ink pasta creates a gorgeous meal for all pasta fans.

Here we go again. Pasta is amazing. When you don’t know what to cook, when you don’t have the time to cook, when your friends pay you a surprise visit, a pasta dish is always a great idea.

My mother sends a package from Slovenia three to four times a year. And, in the most recent one, she put a package of pasta. This short pasta, called “fuži”, is one of the most famous Istrian kinds of pasta. Especially known in Slovenia and Croatia.

The classic fuzi pasta is made of simple noodle dough. The rolled-out dough is then cut into small squares and each square is wrapped around the handle of a wooden spoon.

But the pasta my mom sent, is even more special. In fact, the colours and the flavour are enhanced with the addition of the squid’s tint. It looks gorgeous. A real highlight on every plate. There was some fresh thyme on my kitchen window and I still had a couple of sausages in the fridge. The decision was already made. Pork and thyme are going great together. In contrast to pork with a mild flavour, fresh thyme is a real “chaos” of flavours. In fact, thyme’s flavour is something between earthy and minty, sweet but citrussy, flowery but woodsy, with a light lavender and rosemary note. I love this herb.

In order to add some creaminess, I used some coconut milk (my favourite milk, yummy). And don’t forget the pasta water. Not only does it help to bind the whole ingredients together, but it works as a thickening agent, too. Pasta water is important in every pasta sauce. Your sauce will never be the same again. No more clumsy, average sauces, but silky smooth delights. Wink.

Ingredients for two portions of sausage pasta with fresh thyme:

  • 250 g fuzi pasta (or any other type of pasta)
  • olive oil
  • 1 red onion
  • 1/3 of chili
  • 2-3 sausages (no casing)
  • 100 ml white wine
  • a bunch of fresh thyme
  • 50 ml coconut milk
  • parmesan cheese

To begin, score the sausage and remove the casing. Cut the sausage into rounds. Peel and slice the onion.

In a medium pot, put the water to a boil. At the same time, in a larger frying pan, drizzle some olive oil. Once hot, add the sliced red onion and saute for a couple of minutes or until wilted.

Add chopped chili and the sausage and brown it on all sides. Then, pour in the wine and add half of the thyme. Simmer until evaporated. In the meantime, throw the pasta into the boiling water and cook until al dente. Pour the coconut milk into the sausage pan, add a couple of spoons of pasta water and simmer for a couple more minutes.

When the pasta has the right consistency, add it to the sausage, using a pasta spoon or a skimmer spoon, and toss to combine. Add a couple more spoons of pasta water, one at a time, until silky and creamy.

Finally, divide the sausage thyme pasta between the plates, and sprinkle with more fresh thyme and some parmesan cheese. It makes a lovely midweek lunch or dinner.
