Spring blueberry arugula salad

I am really excited to share this beautiful and delicious spring blueberry arugula salad recipe with you. It will take you no longer than 6 minutes to combine peppery arugula, cucumber, blueberries, tomatoes, walnuts and creamy cheese in a lovely meal. This is a wonderful idea for a healthy lunch or dinner.

In springtime, our body needs fresh vitamins, a fresh boost. And what better way to build up your immune system than making a fabulous salad bowl. Spring is the best time to enjoy fresh salads. There are so many options to pick from, which makes me even more excited for spring.

Therefore, I put together a couple of ideas and there it was. A wonderful and vibrant spring salad. Most of the time the recipe is not even a recipe. In fact, all we need is an idea, to create an amazing dish. Also, go beyond classic lettuce and creamy (full of sugar) salad dressing and make a simple, quick, light and healthy spring blueberry arugula salad. For the dressing, I simply used a fruity vinegar. This berry vinegar, for example, adds an extra fruity note. Lovely!

Blueberry is the king of antioxidant foods

This salad recipe is screaming fresh, crunchy, creamy flavours. Moreover, as I mentioned, this salad is also healthy. Isn’t every salad healthy? Well, yeah. But this one is really healthy. Wink. In fact, each ingredient brings a part of healthy benefits.

For instance, arugula and kidney beans are rich in healthy fibres, walnuts are rich in omega-3 fats and antioxidants and blueberry is the king of the antioxidant foods. In fact, very often we call these sweet, nutritious and wildly popular berries, superfood.

On the other hand, we have cheese. Camembert to be exact. Oh, yummy! Camembert cheese is called the bad boy among cheeses. Why? Because it’s rich in fats. Wink. However, this soft, creamy and with a ripened surface covered cheese is also rich in protein and calcium. And, I love it! But you can also swap it with any other cheese or just skip it.

I love fresh salads. Especially when combined with fruits and nuts. For example, I love this summerish Cantaloupe melon arugula salad, delicious golden zucchini salad, sweet and salty nectarine-bacon salad or this green salad bowl.

Ingredients for a spring blueberry arugula salad:

  • one box or 1 about 130-140 g arugula (rocket)
  • 125 g fresh blueberries
  • 6-8 cherry tomatoes
  • half a cucumber (sliced)
  • 100 g kidney beans
  • berry vinegar
  • olive oil
  • salt
  • 10 walnuts
  • 8-10 slices of Camembert cheese (or any other cheese)

Before anything else, wash the arugula and let it drain, wash and halve the cherry tomatoes, wash the blueberries and wash the cucumber. Then, using a potato peeler, slice the cucumber lengthwise.

Furthermore, in a salad bowl, combine arugula, kidney beans and cucumber slices (I kept some and made cute rolls). Then, season with a pinch of salt, some vinegar and olive oil and toss to combine. At this point add the cherry tomatoes and 2/3 of the blueberries. Toss gently to prevent smashing the blueberries.

Finally, divide the spring blueberry arugula salad between the plates and top it with the rest of blueberries and walnuts. Last but not least, add the creamy Camembert cheese. This is a perfect meal for whoever wants to eat fresh and healthy.
