Strawberry sweetness smoothie with granola topping

Lately we made some changes in our dinner habits. No more cooking. Smoothies all the way! Since they are selling strawberries everywhere, we took advantage of it and bought 1 kg of this sweetness. Some we froze, some we used fresh. If you prefer some other fruit, you are welcome to use it. So, take three minutes and make the strawberry sweetness smoothie with granola topping.

In this recipe, you will also see how to make granola. Very easy and quick to make. I’m making one baking tray of it at a time and it’s sufficient for 10-14 days (if you eat a spoon of it every day). The ingredients are simple; oatmeal, differents nuts and dried fruits.

Ingredients for granola:

  • 150 g oatmeal
  • 100 g almonds (chopped)
  • 4 Tsp shredded coconut flakes
  • 50 g sunflower seeds
  • 4 Tsp sesame seeds
  • 1 Tsp coconut oil
  • honey
  • cinnamon
  • 4 dates
  • 4 dried apricots

Preheat the oven to 150º C.

Place a baking paper sheet on the baking tray. Put all the seeds, flakes and the oatmeal on it and mix all with a spoon or with your hands. Spread the mixture on the tray. Add some coconut oil and mix again. It doesn’t need to be perfect. Spread it again evenly on the tray and sprinkle it with some cinnamon. At the end drizzle some honey over the mixture and put the tray in the oven on the middle rack for 30 minutes. At half time give it a stir to turn the seeds around. When done, take out of the oven, add the chopped dates and apricots and let it cool down. You can keep it in an air proof container so that it keeps the aroma and it stays crunchy.

Ingredients for 2 smoothies and toppings:

  • 200 g frozen strawberries
  • 200 g fresh strawberries + 50 g for topping
  • 1 banana (half of it for the topping)
  • 150 ml coconut milk
  • 50 g of oatmeal
  • 1-2 Tsp granola
  • 1 Tsp shredded coconut flakes
  • 2 tsp sesame seeds

 

Prepare your blender.

Wash the strawberries and cut only the top off. Put the fruits, coco milk and oatmeal in the blender, except some strawberries that you will use for the topping. Blend it for ten seconds and it’s done.

Pour the smoothie into 2 bowls and add the granola, coconut flakes, sesame seeds and fresh strawberries. The strawberry sweetness smoothie with granola topping is ready!
