Are you thinking which fruits and which vegetables can be mixed together? There is no wrong combination. Just follow your fantasy. Your taste buds will be your guide. Combine by sweetness, crunchiness, colours. Try to mix fruits and vegetables and you will be nicely surprised. I combined different vegetables and one fruit. It turned out great, tasty and beautiful.
Ingredients for 2:
- 1 beetroot (raw)
- 1 red onion
- ½ avocado
- 2 carrots
- 2 parsnips
- 3 cloves of garlic
- 250 g spinach
- 200 g strawberries
- 1 lime
- salt and pepper
Before you start cooking, wash, peel, clean and cut the vegetables. I cut them in 2cm big pieces. Chop the onion and garlic. Try to chop the garlic really thin. The spinach only needs to be washed.
Prepare one big pan and one small pot. All the vegetables are going to be prepared in the pan, except the beetroot, which I cooked in a small pot. The reason I did that was that beetroot releases colour, turning everything to pink-red.
Put the beetroot cubes in the small pot and add some hot water. Cook till the beetroot is half soft half crunchy.
In the pan add the carrots and the parsnips. Pour some hot water, just enough to cover the bottom of the pan (ca 5mm). Season, cover and let it simmer for 8 minutes or till the vegetables start to soften. Then add the chopped garlic and onion. Cook for a couple of minutes. Leave it uncovered. At the end add the spinach, cover it and cook for 3 more minutes.
While the vegetables are getting ready, wash, clean and quarter the strawberries. Cut the avocado and sprinkle the cubes with lime juice. This will prevent the avocado from oxidation and turn black.
Serve while still warm. There you have a nice plate; one third of parsnip and carrot, one third of beetroot and one third of strawberries. I decorated it with one single physalis.
