Bacon-wrapped zucchini corn skewers are a wonderful idea of how to combine your favourite food on a skewer. You can combine pretty much everything; vegetables, meat, fruits, cheese and fish. Bacon-wrapped zucchini corn skewers are a must during the summer. Moreover, you can prepare them outside on a grill or simply in a pan in your kitchen. These skewers are tasty, colourful and fun.
Oh, I love summertime. What does summer mean to you? To me, summer is colours, sun, fun, happiness. And so should it be with our/your food too. Your meals should always express those things. Try to combine ingredients with different textures and colours when cooking. At the end of all, your kitchen is a magic place, where everything is possible. Wink.
Is it corn or is it maize? How do you call it? In short, I call it both. Maybe maize is mostly used in Spanish talking countries (maize originates from Mexico after all), while corn is more known in the rest of the world. More importantly, we are talking about corn on a cob and not the already canned corn kernels. Try it, it’s fun and delicious.
Furthermore, this is how I came up with this combination. For example, I already knew I am making skewers. Second, bacon was already on my list. Therefore, I needed something to be wrapped in it. Hmm. There were beautiful, golden corn and green zucchini. They go great together and bacon can be wrapped around zucchini (it wouldn’t be so easy and pretty to eat when around corn). Easy and quick.
Grilled fresh corn is a must in summer
Moreover, you can find either already cooked or a fresh corncob directly at your grocery store. They are both great for grilling. However, the fresh/raw corn needs to be cleaned (only if you are putting it on a skewer) and it is a little bit difficult to cut through. In order to build a skewer, I needed to cut it into 3-4 cm thick rounds.
At first, I tried to cut it as you would normally cut a salami. Well, it didn’t work. You have to make a cut all the way around the cob and then it will just snap. Once you cut them, you have to put them on a skewer (after all, we are making bacon-wrapped zucchini corn skewers). I used a wooden skewer stick, therefore, I needed to make a hole through the cob using something like a metal skewer. If you are using a metal skewer stick, you can skip this step.
As a result, the wooden skewer will easily slide through the sweet corncob, salty bacon and soft zucchini. Sometimes you just have to improvise in the kitchen to make it work. Ingredients for about 6 bacon-wrapped zucchini corn skewers:
- 2 corncobs (fresh or cooked)
- 2 small zucchini
- 8-10 bacon strips
- olive oil
- salt and pepper
- 100-150 ml white wine (Pinot Grigio, Muscat, etc.)
- yoghurt
Start with cleaning the corncobs (if you bought the fresh ones). In the first place, remove the leaves and the corn silk, which looks like „golden-green hair“. Apparently, I’ve read somewhere, they are great to make a healthy tea. Then, cut each corncob into 5-6 rounds, each around 3 cm thick.
At this point, make the holes through the corn rounds (like explained above). Furthermore, wash and cut the zucchini into rounds as well. Try to make them pretty much the same size as the corn. Now that you have everything in front of you (cut corn, zucchini and bacon strips), you can start „building“ the bacon-wrapped zucchini corn skewers.
Simply put corn and zucchini on the skewer, by alternating them. And don’t forget to wrap the bacon around the zucchini before you put it on the skewer. You can wrap it around every piece, even though I did it differently.
Olive oil, butter and wine
When the bacon-wrapped zucchini corn skewers are ready, it is time to preheat your griddle pan or your grill. I also quickly brushed the corn with some olive oil (you can use butter as well). Once the pan gets hot, place in the skewers and grill for 15-20 minutes or until the corn gets tender and the bacon gets crispy.
Turn the skewers every 5 minutes, in order to get it evenly done on each side. Every time a thin layer of bacon fat has formed at the bottom of the pan, I added some white wine to the pan and covered with a lid. The wine gives a nice flavour and transforms also the bacon flavour to the corn. How amazing is that?!
Finally, you are ready to eat. Serve the bacon-wrapped zucchini corn skewers with some herb butter or with some yoghurt. I also sprinkle them with some salt and fresh pepper and eat them just like that, directly from the wooden skewer. Have fun and eat with your hands. Oh, what a perfect summer meal!
