Pancakes are really easy to make. With a simple touch, by adding one ingredient, you can make this amazing colourful curcuma beetroot pancakes. They will just lighten up your day. I love beetroot. In fact, I have been drinking it quite often. It’s healthy and delicious. Adding it to the pancake dough will give a marvelous pink colour. Beautiful!

For the other, the yellow version I used curcuma (also known as turmeric) powder. The result was an intensive yellow colour. As you might already know, curcuma is one of the super foods with many health benefits. Its active ingredient curcumin is a powerful anti-inflammatory agent and a very strong antioxidant.

To make it short; it’s healthy, delicious and fun. Give it a try and play with the colours.

Ingredients for 10 curcuma beetroot pancakes:

  • 8-10 Tbsp of flour
  • 200 ml of milk (any milk will work great)
  • 3 eggs (L)
  • 200-300 ml beetroot juice
  • 3 Tbsp of curcuma (turmeric) powder
  • salt
  • avocado oil
  • 200-250 g of grapes
  • pink pepper
  • 200 g cottage cheese
  • 2-3 pickles
  • 2 Tbsp of sweet corn

We all have made pancakes before. They are simple and quick to make. Let’s prepare the dough. In a bowl mix the eggs, milk and a pinch of salt. Next, divide the mixture between two bowls. In one add the beetroot juice and in the other the curcuma powder. Then continue mixing with slowly adding the flour. Mix each bowl separately until you get a smooth (not too runny) consistency. When you swap from one bowl to the other, wash the whisks, in order to avoid mixing the colours.

Now, how good are you at multitasking? Can you bake pancakes and make the cheese mixture at the same time? No? No problem. In that case, simply make it before or after making the pancakes.

Cut the pickles into small cubes. Put the cottage cheese in a smaller bowl, add the pickles, sweet corn and pink peppercorns and lightly stir. Wash the grapes and put them on a paper towel to dry.

Furthermore, put a couple of drops of avocado oil into a frying pan or a pancake pan. Mine was medium size. Once the oil gets hot, start making pancakes. Try to make them thin (around 2-3 mm) and be quick at flipping them. if you wait too long they will turn brownish. Just do a quick check after 20 seconds. Start with one mixture until you used all the batter and then switch to the other one.

At the end serve the curcuma beetroot pancakes on a bigger plate with the cottage cheese on a side. I rolled up the pancakes and added the grapes on top and all around them. Sprinkle with some more pink pepper and dig in.
