Caramelised garlic salmon

Hi, my dear food lovers. Today I have fish on the menu. To be exact, a caramelised garlic salmon with fennel-coconut sauce. Sounds yummy, right? It’s really easy and quick to prepare. And the flavours are simple but delicious. Fennel and coconut give a fresh and lightly sweet touch to the dish. The caramelised garlic is just unbelievable! It’s like a candy!

Garlic a candy? Hehehe. Yes. I caramelised it in butter, coconut sugar and honey. Try it and then let me know. But I already know you are going to fall in love with it.

Ingredients for two portions of caramelised garlic salmon with fennel-coconut sauce:

  • 200 g salmon (fillet)
  • 3 garlic cloves
  • 1 Tbsp of coconut sugar
  • 4 Tbsp of coconut milk (from a can; 3 spoons for the sauce, 1 for the fish)
  • 1 Tbsp of butter
  • 1 Tbsp of honey
  • ½ of fennel bulb
  • salt

Prepare a smaller pot and a larger frying pan. Wash, clean and cut the fennel bulb, put in the pot with enough water to cover it and cook for about 10 minutes or until soft. Then drain it, add three spoons of the creamy coconut milk and a pinch of salt into the pot and mix with an immersion blender for 30 seconds. Try to get a smooth texture, without any fennel chunks. The fennel-coconut sauce is ready.

Next, peel and cut the garlic into thin slices. Add the butter, sugar and honey to the frying pan. Once the butter melts and becomes hot (be careful not to burn it) add the garlic and the salmon fillet. Place the salmon with the skin down.

Fry for about one minute. Once again, be careful not to burn the butter. You can just remove the pan from the stove. The pan will still be hot. Then, carefully flip over the fillet and after 15 seconds flip it back with the skin down. Moreover, add a small spoon of butter and a big spoon of the creamy coconut milk and put the pan for 30 seconds back on the stove. Now the salmon fillet is done!

This caramelised garlic salmon with fennel-coconut sauce is perfect for a light lunch or dinner. Your kids will also love it. Maybe without the garlic. Yes, I know I said it’s like candy, but anyway. Serve it with a slice of bread and a glass of white wine.
