Creamy Tuscan salmon is a stunning one-pan dish. Pan-seared salmon smothered in a fabulous creamy sauce packed with sweet sun-dried tomatoes and fresh spinach makes a wonderful lunch or dinner. Ready in less than 30 minutes!
I love salmon. You can make plenty of different dishes in different ways. The best part of this dish? You make it in only one pan. Woohoo. In the first step, you sear the salmon. While in the second step, you make the sauce and add the salmon back to the pan. You are going to love this dish.
Tuscan sauce
Furthermore, Tuscan sauce is just fantastic. It’s creamy, rich and a little salty, thanks to Parmesan cheese. Omg, it’s so good, you want to eat it with a spoon directly from the pan. Ha ha ha. Also, it pairs great with crispy on the outside yet tender on the inside, salmon fillets.
In addition, I just want to write an opinion of mine. The Tuscan sauce is definitely not Italian and definitely not a typical Tuscan sauce. I am quite sure, they don’t use cream in cooking. Most likely, the name has been created in the USA, the same way as spaghetti meatballs. Wink.
However, you can swap salmon with any other fish, as well. You can even use chicken or turkey instead. On the other hand, for all of you, who don’t eat fish or poultry, you can simply combine it with pasta or potatoes. Sounds delicious, right? Wink.
Ingredients for 3 portions of creamy Tuscan salmon:
- olive oil
- 300 g salmon fillets (with skin or skinless)
- 1 Tbsp of butter
- 1 red onion (sliced)
- 4 garlic cloves (sliced)
- 8-12 sun-dried tomatoes (halved)
- a splash of white wine or water
- 200 ml cream
- a handful of fresh spinach
- 2 Tbsp of Parmesan cheese
- salt and pepper
First of all, take the salmon out of the fridge 10-15 minutes before you start cooking, and let it get to room temperature. Then, wash the spinach, peel and slice the onion, peel and slice the garlic cloves and tap dry the salmon fillets, using a paper towel.
Furthermore, drizzle some olive oil in a non-sticking pan and heat it. Before searing the salmon, season it with salt and pepper. Only when the oil gets really hot, put the salmon (skin up) in the pan. The salmon fillet will start changing colours (from bottom-up). When it becomes pale pink up to the middle, flip it over and leave it there until the skin gets crispy.
However, if you don’t like the skin, it’s now the perfect moment to easily pull it off. Basically, you flip the fillet on the side, peel the crispy skin off and flip the fillet back. So simple!
How to make the Tuscan sauce
Once the salmon fillets are ready, remove them from the pan and set aside. In the meantime, using the same pan, with all flavourful leftover juices, melt the butter. Then, add the onion and after a minute the garlic and sun-dried tomatoes.
After the tomatoes release their flavour, reduce the heat to medium-low and add a splash of water or wine. Now, pour in the cream and simmer for a minute, without bringing it to boil. Add the washed spinach and season with salt. Once the spinach has wilted, sprinkle some Parmesan cheese, give it a quick stir and gently place the salmon fillets back in the sauce.
Continue to simmer for 4-5 minutes and then serve. This creamy Tuscan salmon is a delight to eat in your family circle, either for lunch or dinner. Also, it pairs beautifully with garlic bread, a slice of sourdough bread or with some soft Naan bread.
