Salmon in tomato fennel sauce is a great idea for weeknight cooking. It’s quick and simple to prepare. This salmon recipe is made with just six simple ingredients that make this dish a perfect meal; delicious and healthful.

Moreover, the salmon fillet gets poached directly in the sauce. That means no salmon flipping or frying or having your fillet falling apart. I simply love this recipe. And I also love salmon because it tastes good and is good for your health. You can’t go wrong with that. I tried to keep it simple (sometimes simple is the best) and get the most out of it.

Ingredients for two portions of salmon in tomato fennel sauce:

  • 2x 200g salmon fillets
  • 400 ml tomato sauce (with cubes, from a can)
  • 4 garlic cloves
  • ½ fennel bulb (you can use also the whole one)
  • olive oil
  • salt and pepper

Start with peeling and thinly slicing the garlic. Then wash the fennel and trim off the fennel stalks (they are a little tough). Sometimes the bulb looks a little dirty (but you can’t wash it off) or has small bruises; instead of removing the outer layer simply peel it (using a potato peeler). Like that, not much of the bulb will go to waste. Then trim off the bottom part. At the end cut the bulb (either crosswise or lengthwise) into thin slices. OMG, I just love this aromatic fennel sense!

Furthermore, drizzle the pan with some olive oil. When it gets hot add the garlic and the fennel slices. After 30 seconds flip it on the other side or give it a little stir. Be careful not to let the garlic burn or it will taste bitter and the dish will be ruined. So, before the garlic turns brownish, add the tomato sauce to the pan. I like the one with small tomato cubes in it. Season well and bring to simmer on medium heat.

Once the sauce is simmering, lower the heat to medium-low and place the salmon (skin down, if there is any skin) on top of the tomato sauce, cover the pan and poach for 10-15 minutes.
