Flatbread with roasted scallions

Homemade puffy flatbread with roasted scallions makes a great mid-week dinner or weekend lunch. Add a couple of delicious mortadella slices and some plain yogurt to create a perfect meal. You simply have to try it, maybe as a snack, appetizer or as a whole meal.

Now, this is a fun and delicious lunch. It looks a bit like tapas, but it’s a real lunch. Only different. And it’s just so simple as it seems. Even making the flatbread is incredibly easy and quick. In fact, you can prepare it in less than 15 minutes. Woohoo. Wink.

You won’t believe where I found this recipe. Jamie Oliver’s son, Buddy, made a short video and I just loved it. This flatbread is puffy, soft and buttery. And all you need to do is to mix the ingredients, quickly knead it, roll it out and throw in a pan. It doesn’t get simpler than that. Once you’ll try it, you’ll come back for more for sure.

Moreover, I added some fresh dill to the dough. However, you can make plenty of variations with different spices and herbs, vegetables or even cheese or nuts. It all depends on what you’ll serve it with. For example, it pairs great with a delicious thick curry or homemade hummus. Additionally, I find it tastes great when rubbed with some garlic and eaten next to a big bowl of radicchio. Amazing.

Furthermore, scallions or spring onions are so much more than just something you add to your soup. Wink. In fact, you can enjoy them either raw or cooked. As raw, they have a mild flavour, where the white part has a typical onion sharp taste and the green part a bit fresher and bitter taste. They pair great with salads, sweet potatoes and as a garnish for meat.

On the other hand, cooked scallions, either whole or chopped, result in a bit sweet yet still with a lovely pungent flavour. I love to add scallions to risottos, thick stews, green salsas, vegetable soups or to meat as a side dish. Besides this, I love to quickly blanch them and then roast in the oven. Yummy. They get sweet, crisp and a bit charred.

In order to add some freshness to the dish, I used some plain Greek yogurt. However, you can make some mayo or some delicious aioli. It is up to you.

Ingredients for two portions of flatbread (four flatbread pieces) with roasted scallions:

  • 115g of self-raising flour (or regular flour and 1/2 tsp baking powder)
  • 115g of plain yogurt (Greek yogurt)
  • a bunch of fresh dill (optional)
  • 15-20 scallions
  • 4 slices of mortadella
  • a couple of spoons of yogurt

Preheat the oven at 200º C and take the butter out of the fridge (to soften).

To begin, wash and trim the scallions. Also, if you like, you can halve them lengthwise. Then, blanch them in boiling water for 10 seconds and quickly transfer them to a bowl with cold, icy water. More, lay a piece of parchment paper on a baking sheet, spread the scallions evenly on it, drizzle them with some olive oil, sprinkle with sea salt and put in the oven for about 20 minutes or until softened, wilted and slightly charred.

Furthermore, in a bowl combine all the flatbread ingredients: self-raising flour, yogurt, salt and optionally some dill (or you can use any other herb or spice or just leave it plain). Firstly, mix the ingredients together, using a wooden spoon, to combine well. Secondly, when it gets difficult to stir it is time to knead. Dust your working surface only a bit and start kneading until smooth. Thirdly, divide the dough into four equal pieces and roll each of them out.

You can make them either round, oval or square. The shape doesn’t really matter here. The most important thing is, how it tastes. Wink. Additionally, I scored the dough in the middle, but that’s also just for the looks.

Moreover, preheat a larger skillet and once it’s hot, place two flatbreads in it. After 2-3 minutes flip them over for another 2-3 minutes or until puffy and light golden brown. Then, remove them from the pan and brush with some soft butter. Continue with the rest of the dough. By this time, also the scallions should be ready.

In conclusion, nicely arrange the flatbread with roasted scallions, add a couple of mortadella slices and a spoon of plain yogurt. This meal is a wonderful idea how to make a different lunch that you maybe usually wouldn’t do. You might add some cheese or cream cheese, too.
