Add these cute pancake cereals to your menu this weekend. A bowl of fluffy mini cinnamon pancakes on creamy yogurt, fresh berries, kiwi and a drizzle of honey is perfect for kids and adults to enjoy for breakfast, brunch or dinner.

Do you still remember Dalgona coffee? It was a trend a couple of years ago. The next one that went viral on the internet was this incredibly soft and beautiful wool roll bread. I made both of them. I still didn’t manage to make the garden focaccia, but it is never too late. Wink.

However, I picked another Tik Tok food trend. Maybe it is not so new anymore, but I think it is still a trend. It must be. It is so cute. I am talking about pancake cereals. There is a new way to enjoy pancakes. Yes. As cereals! Have you ever dreamed of having pancake cereals? Amazing. More, you can enjoy them for breakfast, brunch, or as a fancy dessert.

What are pancake cereals?

What are pancake cereals? They are mini fluffy pancakes, that resemble classic cereals. Crisp on the outside and soft on the inside pancakes are served in a bowl, just like regular cereals. But this breakfast is way better. Pancakes, pancakes and pancakes!

These mini cute pancakes are easy to make, but at the same time, a bit time-consuming. The easiest way is to squirt them into a pan with a squeeze bottle. However, there are other ways. I simply used a piping bag. You can use a teaspoon, too. Every minute of piping and flipping those small dots is totally worth it.

Instead of adding milk to the pancake cereal bowl, I prefer adding creamy yoghurt. They will get soggy when sitting in milk. But, hey, if you like it, go on.

They are super cute and they taste as delicious as real pancakes. The batter is a bit thicker than normal. In other words, it looks more like American pancake dough rather than European one. You can check these delicious hazelnut-chocolate pancakes or these turmeric-beetroot pancakes (European style) to see the difference.

The batter is made with eggs, milk, flour, sugar, lemon juice, baking soda and baking powder. Baking powder and baking soda are the reasons for the fluffy and puffy pancakes. While baking powder reacts to heat, baking soda, on the other hand, reacts to acid (lemon juice in our case). As a result, the pancake batter puffs up. Wink.

How large should the mini pancakes be? The smaller, the crispier (aim for 1 cm large round shapes). The larger the pancakes, the fluffier and softer. For a fluffy mini pancake, pipe 1,5 -2 cm large dots. Or simply make a couple of small dots of different sizes, in order to decide which size you prefer more. Make sure you start with a hot pan to get those lovely golden edges.

Additionally, regular pancakes already taste great. But, why not improve the flavour with some spices? For instance, you can use turmeric, nutmeg or cinnamon. A small spoon will add a lovely flavour to your dish.

Let’s not forget the toppings. Whatever topping you’ll pick, will taste delicious. Whether berries, honey, nuts, chocolate, banana, peaches or jam, you can’t go wrong.

Ingredients for two portions of pancake cereals:

  • 1 egg
  • 180 ml milk
  • pinch of salt
  • 3 Tbsp of oil
  • 2 Tbsp of lemon juice (fresh)
  • 30 g sugar
  • 1 tsp of vanilla paste
  • 2 tsp of cinnamon
  • 150 g flour
  • 1/3 tsp of baking powder
  • 1/2 tsp of baking soda
  • 200 g Greek yogurt
  • 125 g fresh raspberries
  • 1 kiwi
  • a drizzle of honey

To begin, prepare the batter. In a bowl, combine egg, milk, sugar, salt, oil, vanilla, lemon juice and cinnamon. Whisk to combine well. Then, stir in the flour, baking powder and baking soda. Whisk until smooth. Let the batter sit for 5 minutes.

In the meantime, heat a non-sticking pan. Then, pour the batter into a piping bag (use a squeeze bottle or a teaspoon). Lightly grease the pan, using butter or any oil. Once the pan is hot, lightly squeeze the batter onto it by making small round shapes or dots (about 1,5 cm large). Make sure you leave some space between each dot.

Once they start to bubble on top, using a spatula or a fork, flip each mini pancake and cook for 30 seconds on the other side as well. After they turn golden, remove them from the pan and transfer them into a bowl. Let them be uncovered. Continue with the remaining batter. Grease the pan when needed.

Finally, add a couple of spoons of yogurt into two bowls, add half of the pancake cereals to each one and top with raspberries and kiwi and drizzle with some honey.
