Patatas allo pobre

Moving further on with the FOODball journey, we have Spain playing today. My first association was paella. But then I did a little research and decided on Patatas allo pobre. Already the name itself says that this is a simple and humble dish. Translated it means “poor man’s potatoes”. Despite the name, this dish is simply delicious! There is nothing “poor” in its flavour.

This is a typical Spanish dish, served as tapas alone or either with vegetables, eggs, fish, jamón or chorizo. Mmmmm, I love this sausage! But back to the potatoes. Patatas allo pobre is a budget dish that you can easily make in your own kitchen in only 20 minutes.

Ingredients for two portions of Patatas allo pobre:

  • 4-5 big potatoes
  • 5 Tbsp olive oil
  • 1 Tbsp butter
  • 2 garlic cloves
  • 3 Tbsp chili-mango vinegar
  • salt and pepper
  • cilantro
  • 4 chorizo sausages (optional)

Peel and wash the potatoes. Then cut them into 5mm thin slices. Drizzle the olive oil in a large frying pan, add the butter and top it with the potato slices. Give it a little shake, in order to spread the potatoes evenly around the pan. Sprinkle with some salt and keep checking on them. You will need to frequently flip them around. Don’t worry if some slices get a little brown and some not. It’s exactly what we want.

Once they start to get a lovely golden-brown colour, reduce the heat to medium. Furthermore, thinly chop the garlic and add it to a small bowl together with vinegar and black pepper. When the potatoes are ready, pour the mixture over them and flip the potatoes to coat evenly.

I also made chorizo in a pan as a side dish. As I said earlier, this is optional. You can also make vegetables next to the potatoes. But in case you choose to make chorizo, simply cut them lengthwise in half and place them in a hot pan for 3 minutes on each side.

Finally, serve this amazing “rich” in flavour Patatas allo pobre as tapas on the football evening when “La Roja” is playing. Sprinkle them with some cilantro or parsley for a nice extra flavour.
