Steak with chimichurri

Argentinian presence at the Football World Cup is a perfect opportunity to show you this delicious dish; steak with Chimichurri. Argentina is known for its amazing grilled meat like pork, beef, sausages and ribs. But let’s stop at the steak. For this recipe, I chose a sirloin and a roast beef steak. You can easily pick the one you like most.

What is Chimichurri? This is a delicious green salsa. It is mostly made out of onion, garlic, parsley, olive oil and chili. But there are two things that make it special; dry oregano and vinegar or lime. Chimichurri salsa should always be present at any grilling party, next to any meat. Sometimes it is also used as a marinade. I could eat it simply with a spoon. It is so delicious! Chimichurri; you have to love it!

Ingredients for (2 portions) steak with chimichurri:

  • 2 steaks (200-250g each)
  • olive oil
  • 1 red bell pepper
  • 1 shallot
  • a bundle of cilantro
  • 1 lemongrass
  • 3 garlic cloves
  • 3 tsp of oregano (dry)
  • ½ mango
  • 3 Tbsp of mango-chili vinegar
  • salt and pepper

To make this amazing Chimichurri salsa, put the washed and roughly chopped cilantro, chopped lemongrass, garlic, shallot, olive oil, salt, oregano and mango-chili vinegar in a food processor. You can use an immersion blender as well. If you don’t have mango vinegar, you can use any vinegar you like. But I personally would take a fruity one. Furthermore, pulse until you reach a salsa consistency. The Chimichurri is done!

Next, wash and clean the bell-pepper. Try to remove all the white parts from the inside of the pepper. Then cut it into 5mm small cubes. I left it simply as it is; raw. When serving it, I just sprinkled it with some salt.

Now move on to the steak! Rub the steaks with olive oil and prepare either a frying pan or a griddle pan. I like to season the steak after it’s done. Once the pan gets hot, place the two steaks in and grill them for 3-4 minutes on each side or more, depending on how you like your steak.

In the meantime preheat the oven to 60ºC and prepare some aluminium foil. After the steaks are ready, place them on the aluminium foil, season well, wrap the foil around it and put in the oven for 5 minutes. Steak needs to rest, in order to be juicier and tastier.

One last thing to do. Cut the fresh mango into small cubes. Serve the steak with chimichurri salsa on a bed of red peppers topped some sweet mango cubes. Enjoy it as a great supper, at the picnic or for the World Cup evening.
