Brussels sprouts salad

Salads don’t need to be boring. They never are in this house. There are hundreds of salad recipes. Here is an idea for a great brussels sprouts salad. It involves some cooking. Well, I shouldn’t call it cooking, it only takes 5 minutes. This salad has the crunch, the sweetness, the fruitiness and some cheese on top.

Ingredients that you will need for the brussels sprouts salad:

  • 1/4 of iceberg lettuce
  • 20-25 Brussels sprouts
  • 10 radishes
  • 4 Tsp corn
  • 150 g Feta cheese
  • 1 pink grapefruit
  • 2 Tsp strawberry vinegar
  • 2 Tsp olive oil
  • 1 Tsp honey
  • pinch of chilli salt

Wash the vegetables and start cleaning the Brussels sprouts. In case you have ever wondered where the name comes from; Brussels sprouts are so called because they were first cultivated in Brussels in the 18th Century.  Cut off the bottom and cut them in half. Put them in a pan, top with 1 cm of water, add some salt and simmer for 5 minutes. Then remove from the pan. In these 5 minutes you can do all the rest. Cut the lettuce in stripes or “a bite” big pieces. The radishes make a great contrast on the green salad and green sprouts. I cut them in half, but you can also cut them into quarters.

So now you have in the bowl the lettuce and the radishes. You can add the corn, the Brussels sprouts and the Feta cheese cubes.

For the dressing mix the grapefruit juice (freshly squeezed), strawberry vinegar or balsamic vinegar, olive oil, honey and the chilli salt. Pour over the salad and mix well.

Here is one more idea for another dressing. This one is a little more creamy, nutty and “hot”.

The ingredients for the peanut dressing:

A combination you would never thought of.
A combination you would never think of goes with brussels sprouts salad.
  • 2 Tsp of peanuts
  • 3 Tsp olive oil
  • 2 Tsp yoghurt
  • 1 chilli (chopped)

Put all the ingredients in a plastic cup and blend for a minute. I left some chunks of peanuts for some crunchiness. Easy, tasty and different. Serve the brussels sprouts salad with some boiled eggs or sunflower seed bread.
