Try this easy to follow sweet mango purée yoghurt. Not only is it easy and quick to make but it’s also healthy and delicious. Mango is a very versatile fruit; perfect for salads, fruit salads, goes great with meat and fish and it fits in every dessert.
The best mango for this recipe is a ripe mango. How you recognise a ripe mango? Mango changes colours from green-red to orange-yellow. The orange-yellow is the right one to pick. Then you should touch the mango. It should feel soft, not too hard. The third thing to do is to smell it. Don’t be embarrassed to do that. I do it every time. If the mango is ripe you will smell a nice flavour. Hehehe.
This sweet mango purée yoghurt is so easy to make that I probably shouldn’t call it a recipe. However, sometimes you just don’t think of simple ingredients or simple combinations and maybe you don’t come up with a simple idea for a healthy and delicious snack.
Ingredients for two portions of sweet mango purée yoghurt:
- 2 mangoes (ripe)
- 300 ml Greek yoghurt
- 125 g raspberries
Wash and peel the mangoes. The easiest way to peel a mango is using a potato peeler. And when the mango is really ripe, you can easily peel it using your hands. Then remove the juicy, yellow flesh from the pit. This can be a little tricky. When the mango is perfectly ripe you can scrape the flesh off using a spoon. In other cases, you can cut (using a sharp knife) just along the pit. Be careful, most of the time you are just guessing where the pit is.
The mangoes I bought were so perfect, that I simply pulled the mango flesh off the pit. Since we are making a purée, it really doesn’t matter how it will look like afterwards. Hehehe. Furthermore, place the mangoes into a mixer or use an immersion blender. Blend for 30 seconds. I left smaller chinks in it to give it more texture.
Prepare two smoothie bowls and add the two ingredients to it; the delicious mango and the creamy yoghurt. It can’t get easier than this. To create a cute pattern, try to add the two ingredients by alternating them. Serve the sweet mango purée yoghurt topped with fresh raspberries or any fruit you like. Eat it as a snack, for breakfast or a light dinner.
