Who has never missed a football World Cup? Brazil, of course! For a change, I didn’t write a meat or salad recipe. This time I present you the ultimate dessert; the mango cream! You are going to love it!

You will also see that it’s the easiest dessert ever. There is no need to cook or bake. All you need is a blender and three ingredients. But maybe you will decide to make one of those ingredients yourself. What do I mean by that? We are getting there. Keep reading.

Let me say a couple of words about the third ingredient. I am talking about condensed milk. Sweetened condensed milk to be exact. Yes, people of Brazil love it! They are the biggest consumers of this sweet product in the world! I can’t blame them, it’s sooooo delicious! Sweetened condensed milk is basically evaporated cow’s milk with a lot of sugar. Sweet sweet sweet!

Since I am lactose intolerant, I made a lactose-free sweetened condensed milk. This can be made in less than 5 minutes. It’s an instant recipe. If you decide for this option, follow the recipe given below.

Ingredients for 400-500 ml of lactose-free sweetened condensed milk:

  • 140 g coconut milk powder
  • 70 g coconut sugar
  • 60 g sugar
  • 120 ml warm water
  • 2 Tbsp coconut oil (melted)
  • 2 pinches of salt

Put the coconut milk powder and coconut sugar in the blender and pulse for 30 seconds or until the sugar gets powdered. I used the coconut sugar because I wanted a caramelised flavour. Then add the rest of the ingredients and blend for two minutes until fluffy and thick.

Don’t worry if it doesn’t get thick straight away. I put it in a glass container and placed it in the fridge for a couple of hours. OMG, it was the fluffiest, sweetest and creamiest thing ever! And the good thing is that you can keep it up to one week in the fridge.

Going back to the mango cream; I love mango. Mango is not only perfect for desserts but also for salads and fits great with meat too. The best mango is a ripe and sweet mango. Moreover, when buying a mango, give it a gentle squeeze. You’ll see straight away if it’s a ripe one. You will feel a soft flesh under the peel. Another thing you can do is to smell it. If you can sense the sweetness of the fruit by smelling it, then that’s the one to buy.

Ingredients for 4 portions (ca 800 ml) of mango cream:

  • 2 ripe mangos
  • 300-400 g plain Greek yoghurt (you can also use vanilla ice-cream)
  • 5 Tbsp of sweetened condensed milk (lactose-free)

Prepare your blender and put in all the ingredients. There is no need to say, that you should peel the mangos and remove the pit, right? Then blend for 30 seconds or until smooth, creamy and fluffy. I know I use fluffy a lot, but that word describes it so good.

Pour this mango deliciousness into glasses and place them in the freezer for 20-30 minutes. Ok, time is over! Are you ready for the mango cream? Once you’ll taste it, you’ll wish the glass would be bottomless. Heheheh. Enjoy the mango cream anytime, on any occasion!
