A lovely vegetarian dish with sunny side up egg, avocado, truffle and homemade flatbread.

Truffled sunny side up egg

Truffled sunny side up egg is such a simple but tasty pairing dish to enjoy for breakfast, brunch or Sunday lunch. Silky egg yolk, aromatic truffle, creamy avocado and homemade garlic flatbread make it a wonderful vegetarian and filling meal.

Simple dishes can be amazing, too. A couple of ingredients with just one special addition turn it into a gourmet dish. That special addition is the truffle. In fact, the black truffle has a strong aroma, which pairs wonderfully with food that has a neutral flavour. For instance, the brilliant combos are risotto (check also my truffle risotto recipe), pasta, butter, oil, potatoes and egg.

Moreover, truffles tend to infuse their aroma to everything around them. Therefore, the best way to combine them with other food is to pick ingredients that “leaves” the spotlight on the truffle. Combining the truffle with other foods with strong aromas would lead to truffle flavour loss. And that would be a terrible waste.

Truffle on eggs. Oh, delicious! I am talking about sunny side up eggs with a semi-runny egg yolk. Yummy. That’s like heaven on a plate, when you make a cut into the egg yolk and you see it slowly running onto the plate.

The egg yolk consists mostly of fats, which makes it taste buttery, very creamy and silky smooth. In other words, when the mouthfeel and the richness of the egg yolk touch your taste buds the message they send to your brain is: “Over here with the fat.” Wink.

It’s just like sugar and fat in cakes, potato chips, pretzels and other good tasting snacks. Moreover, just like all of those snacks also egg yolks should be enjoyed in moderation. Don’t stuff yourself with five eggs every day but eat one to two per week instead and everything will be ok. Wink.

Last but not least, I thought a homemade flatbread would pair great with a simple egg and truffles. This is a very easy recipe, that everyone can make. And to make them a bit more flavourful, they are brushed with butter and rubbed with garlic. Lovely!

Ingredients for two portions of truffled sunny side up egg:

  • one garlic clove
  • olive oil
  • 4 eggs
  • 1-2 black truffles
  • fresh thyme
  • salt
  • 1 avocado

Ingredients for 4 small or 2 large flatbreads:

  • 150 g flour
  • a pinch of salt
  • a pinch of baking powder
  • 150 g plain yogurt or Greek yogurt
  • some melted butter to brush over
  • 1 garlic clove

To begin, prepare the flatbread. In a bowl combine flour, salt, baking powder and yogurt. Firstly, mix until combined and then knead until smooth. It will take you a couple of minutes. Form a ball, cover with a plate and let to rest for 10 minutes.

Afterwards, divide the dough into four pieces or simply halve it. Then, on a dusted surface, pat and flatten the first piece of dough and, using a rolling pin, roll it out into a 3 mm thick oval shape (or any shape).

At this point, heat a larger non-sticking frying pan and once hot lay in the first flatbread for 1-2 minutes. After one minute flip it over for another minute. Meanwhile, the first bread is in the pan, roll out the next one. Once the flatbread is ready, brush it with melted butter and rub it with fresh garlic. Keep the flatbread warm wrapped in alu foil in the oven at 30ºC.

Furthermore, heat the non-sticking frying pan. Once the pan is hot, cut the end of the garlic off and rub with the garlic around the pan.

Then, grate some truffles in the pan and crack the eggs on top of them. Sprinkle with some salt and cook until the egg whites are set but the yolk still a bit runny.

Finally, serve the homemade flatbread, carefully transfer the truffled sunnyside eggs onto the plate, add the sliced avocado and sprinkle with some fresh thyme. For the final touch, shave some more black truffles on top of the eggs.
