A new avocado sensation is here. How many avocado recipes do you know? I thought I knew all the ways to enjoy a delicious and buttery avocado. But man, was I surprised to discover the crispy avocado fries. I’ve made polenta fries before, but never avocado fries. Have you? If not, you have to try. These avocado fries are an amazing snack; crunchy on the outside, green and soft on the inside. Yummy!

Moreover, the avocados are healthy, rich in potassium and other vitamins. It is loaded with healthy fats (which is good for your heart) and fibre. Start eating avocado today.

What is your favourite avocado recipe? I bet your first thought is guacamole or some salad. I know mine was. Hehehe. However, my favourite recipes are; avocado-lime tart, ceviche, avocado tuna sandwich, bacon wrapped avocado and of course (from now) the crispy avocado fries. Well, I can’t pick only one. I can’t. I love avocado and all these avocado recipes are amazingly tasty.

Even though it is quite some work and you’ll have a mess later in the kitchen, you have to try this recipe. It is really worth it. I know, they could have been even healthier (if I would have baked them) but I simply fried them. I had no patience to wait for them to be baked. Hahaha. Well, next time I am going to bake them.

Ingredients for about 70-90 avocado fries:

  • 3 avocados (ripe, but not too soft)
  • 2 eggs (L; beaten)
  • 4-5 Tbsp flour (more if needed)
  • 12 Tbsp breadcrumbs (more if needed)
  • salt and pepper
  • 100 g pecorino cheese (grated)
  • olive oil (or a vegetable oil)
  • cream cheese

Cut the avocado in half, remove the pit and peel them. Be careful not to smash or break them. Then cut them crosswise into 5 mm thick slices.

Furthermore, prepare a plate with flour, a medium bowl with eggs, salt and pepper and a bowl with breadcrumbs and pecorino cheese. In this order, you do the coating as well. Pick the slices one by one. Start with coating them with flour, then egg and the last step is the breadcrumbs. Gently press them into the breadcrumbs, in order to glue them better on the avocado slice. Repeat these steps with all of the avocado slices.

When all slices are well coated, prepare a larger frying pan, pour in some olive oil or vegetable oil (just enough to cover the bottom of the pan) and heat it up. Once the oil gets hot (do the check with a toothpick; immerse the tip of the toothpick in the oil and if you see bubbles forming around it, it’s ready) place in a part of the avocado slices. Try to put them in one layer and not on top of each other.

Fry them for a couple of minutes on both sides until golden brown and crispy. Continue until all the slices are fried. Place all of the fried avocado fries on paper towels to drain them.

Finally, it is time to serve and eat these delicious, crispy avocado fries. All avocado lovers will be very enthusiastic about them. They go perfectly with some cream cheese or sour cream.
